FITNESS FOODIE: SWEET AND SOUR CHICKEN
Has your chicken dinner repertoire gotten a little boring?
Spice things up with our Wellness recipe (good for the palate but also for your figure) for a tender, salty, sweet and sour and tasty chicken dinner! This recipe serves chicken legs that are browned on the outside and flavored on the inside. The tender carrots and celery are in tasty morsels served with the chicken.
Serve a vibrant green salad to complement this meal, made with spinach or kale. And it is ready to taste!
What you need | Servings: 8
1.3 kg of boneless and skinless chicken legs
Sea salt (always use pink Hymalaya salt) and black pepper
2 tablespoons of extra virgin olive oil
1 yellow onion, chopped
4 carrots, halved lengthwise and sliced
4 sliced celery
8 cloves of garlic, minced
¼ cup of coconut palm sugar
1 cup of dry red wine
½ cup of apple cider vinegar
½ cup of freshly squeezed orange juice
¼ cup of sliced almonds
INSTRUCTIONS:
Wash the chicken and dry it. Season both sides with sea salt and black pepper. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and brown each side, about 5 minutes. Transfer the chicken to a clean plate and drain it from the pan.
Add the onion, carrot, celery and garlic to the pan and cook over medium-high heat for about 8 minutes, until golden brown. Add the coconut palm sugar, wine, vinegar, orange juice and sliced almonds. Bring to the boil.
Add the chicken to the pan and cook, partially covered, for 35 minutes or until cooked through. Remove the lid and cook for a few more minutes, until the sauce has thickened. Serve hot. It's ready!
