Horta Vrasta (Greek Boiled Greens)
Ingredients
1 large bunch of dark leafy greens (dandelion, chard, kale, spinach, or a mix)
1โ€“2 tbsp extra virgin olive oil
Juice of 1 lemon (or more to taste)
Sea salt
Optional add-ons: sliced garlic, a splash of vinegar, or crumbled feta on the side.

Method
Wash greens thoroughly to remove grit. Trim any tough stems.
Bring a large pot of salted water to a boil.
Add greens and cook for 5โ€“7 minutes, until tender but still vibrant green.
Drain well and place on a serving dish.
Drizzle generously with olive oil and squeeze over fresh lemon juice.
Season with sea salt, toss lightly, and serve warm or at room temperature.

โœจ Tip: Greeks often serve this with grilled fish or bread โ€” but itโ€™s also perfect as a nutrient-dense side dish or even a light main with beans.
Depending on the greens you choose, keep the water you've used for boiling and drink as a tea.

"Did you know your rice might be carrying an unwanted guest โ€” arsenic?"

Rice naturally absorbs more arsenic from soil and water than most crops, especially when grown in flooded fields. Chronic arsenic exposure, even in small amounts, has been linked to skin changes, reduced immunity, and long-term health risks. But hereโ€™s the good news: with the right cooking method, you can dramatically reduce it.

The parboil-and-drain method โ€” tested in food safety studies โ€” can cut arsenic levels by up to 50โ€“80%:
1๏ธโƒฃ Rinse thoroughly under running water until clear.
2๏ธโƒฃ Parboil in a large pot of boiling water (6 parts water to 1 part rice) for 5-6 minutes.
3๏ธโƒฃ Drain the water completely โ€” this is where much of the arsenic goes.
4๏ธโƒฃ Cook with fresh water until done.

Why it works: arsenic is water-soluble, so the first boil draws it out before the grains absorb too much water. Discarding that water is the key step.

Bonus: Choosing basmati or jasmine rice from India, Pakistan, or Thailand can lower your exposure even further.
Small kitchen habits like this can make a big difference to your health โ€” especially if rice is a regular on your plate.
