So much love for my community ♥️ Thanks for sharing my recipe 🙏

Posted • 😋🍪 Nom, nom, nom... It's National Homemade Cookies Day 🍪😋! Don't be dismayed 😩 though, you can still participate! 💛 If you’re looking for a simple grain-free cookie recipe with only 6 ingredients, check out these Nut Butter Cookies (shout out to Burn sister, Alissa Malli for the recipe!) 👇
🍪1 cup nut butter (your choice)
🍪1 egg
🍪3/4 cup coconut sugar
🍪1/2 cup unsweetened desiccated coconut
🍪1 tsp vanilla extract
🍪1 tsp baking soda

Mix all ingredients in a bowl and let dough sit in the fridge for 1 hour. Use a cookie dough scoop to spoon batter onto baking sheet lined with parchment paper. Flatten cookie dough with a fork. Bake at 325F for 7-9 mins. Remove from oven and allow cookies to cool for 3 mins on baking sheet before transferring to a wire rack. Enjoy✨

I’ve been taking a bit of a break from social media which has been exactly what I needed!! But I haven’t taken a break from working on my upper body strength! Over the last couple of months I’ve been working hard on my tricep push-ups and I’m so proud of my progress. It’s still progress and not perfection but I’ll take it. Hard work does pay off👊🏻

Sometimes simple is better. One-bowl banana oat blueberry muffins. Dairy free and naturally sweetened with bananas and applesauce. Perfect on it’s own or with a little plain Greek yogurt 🙌
1 1/2 mashed bananas
2 small (1 large) eggs
1/4 cup unsweetened applesauce
1 cup rolled oats
1 tsp cinnamon
1 tsp baking powder
1/2 tsp baking soda
1-2 tbsp maple syrup (optional)

Mix all ingredients in a bowl and pour batter into 12 silicone muffin tins. Bake for 15-20 mins at 350F. Happy weekend! 💛

I’m super excited to share this chocolate protein banana bread recipe✨the best part?? No oil, no flour, naturally sweetened with banana and applesauce and it’s super MOIST!!! I usually find that baking with protein powder dries out my baking but not this recipe. If your prefer a high fat, lower carb option swap out applesauce for nut butter. Check it out👇
🍫1 scoop organic whey chocolate protein powder (I use Burn Boot Camp AfterBurn)
🍫1/4 cup unsweetened cocoa powder (or cacao powder)
🍫1/3 cup unsweetened applesauce
🍫1 ripe banana, mashed
🍫1 egg
🍫1 tsp cinnamon powder
🍫 1/2 tsp baking soda
Mix all ingredients in a bowl and pour batter into bread loaf pan lined with parchment paper. If you’re using a convection oven bake at 160C for 20-25 mins. If using a conventional oven bake at 350F for 20-25 mins. You don’t want to over-bake the bread as it will really dry out. I usually start checking the bread every few mins once it reaches the 15 min mark. You’ll know when it’s done when it’s firm to touch and inserted toothpick comes out a little wet. Enjoy 😊

The second photo (SWIPE 👈) was taken back in late 2015 when we were living in Singapore. I had far fewer lines and wrinkles, my face was much tighter and smoother but what this photo doesn’t show you is what was going on inside. I was lost without a purpose, miserable in my job, and discontent. The last few years have been a journey of self-discovery. It hasn’t been easy, there have been ups and downs, I’ve struggled, doubted myself (still do) and these lines, creases, and wrinkles are proof of this. A sign of natural aging, yes of course, but also a sign that I’ve been working on the tough stuff. And honestly, I wouldn’t have wanted it any other way. When I look at this photo☝️I see a 43 year-old woman that is happy, fulfilled, and has a purpose in life. What do you see when you look in the mirror?💛

These are the moments when I realize I can be a bit of a scatter brain 🤣🤣All the while I thought I was making “roasted red pepper” hummus until Kesh gently reminded me that these weren’t roasted red peppers but sun-dried tomatoes😂🤦‍♀️I promise I know the difference between the two but clearly wasn’t using my head🤣anyway here is my recipe for SUN-DRIED TOMATO HUMMUS! I made a cilantro hummus last week following this same recipe and you could really add whatever you like...beets or even roasted red peppers😉
🌶1 can drained and rinsed chickpeas
🌶1-2 garlic cloves
🌶2 tbsp tahini
🌶Juice of half lemon (optional)
🌶 Sea salt
🌶4-5 sun-dried tomatoes (w/ a little of the oil from the jar)
🌶1/4 cup cold water
🌶EVOO (for drizzling on top)
My tip for making this hummus so smooth and creamy is to food process the chickpeas and garlic cloves for 5 mins until paste-like. Then add tahini, salt, and lemon and food process for another min. Add sun-dried tomatoes and food process until nice and smooth. Add cold water and blend until the consistency of the hummus is like a dip or your liking✨

Love these banana oat bars!!! No oil and naturally sweetened with bananas and applesauce👏make these gluten-free by using GF oats and baking powder. Tapioca flour and finely pulsed oats help to make these bars super moist😉
🍌1 3/4 cup oat flour
🍌1/4 cup tapioca flour
🍌1/4 tsp salt
🍌1 tsp baking powder
🍌1/2 tsp baking soda
🍌2 ripe bananas, mashed
🍌1/2 cup unsweetened applesauce
🍌1 egg
🍌1 tsp cinnamon powder
Mix first 5 ingredients and set aside. In a separate bowl, add mashed banana, applesauce, egg, and cinnamon powder and mix well. Add flour mixture and combine well. Pour into 9x9 silicone baking pan or pan lined with parchment paper. Top with berries and bake for 25-30 mins at 160C or 350F. Let cool for 30-45 mins before cutting into squares✨
