There was not a single soul in the campground. Bliss!

Until I got a flat battery and had to hail down a lovely random guyโ€ฆ who then fried my jumper leads. Cue 3 hour wait and local RAA to the rescue!

Trying to eat healthier? Here are some additives and ingredients to keep an eye out for when checking those food labels! ๐Ÿ“œโœจ

1. Maltodextrin:
Highly processed and can spike blood sugar. Found in sauces and snacks.

2. High Fructose Corn Syrup (HFCS):
Linked to obesity and diabetes. Found in sugary drinks and baked goods.

3. Artificial Sweeteners (Aspartame, Sucralose):
Potential metabolic issues. Found in diet sodas and sugar-free treats.

4. Trans Fats (Partially Hydrogenated Oils):
Raises bad cholesterol. Found in margarine and fried foods.

5. Vegetable Oils
High in omega-6s, contributing to inflammation. Found in processed foods and dressings.

6. Artificial Colors (Red 40, Yellow 5):
Linked to hyperactivity in kids. Found in candies and beverages.

7. MSG:
Some report sensitivity (headaches, nausea). Found in soups and snacks.

8. Preservatives (Sodium Benzoate, Nitrites):
Linked to health risks and allergies. Found in processed meats and packaged foods.

9. Natural and Artificial Flavors:
Complex chemical mixtures. Found in almost all processed foods.

Whatโ€™s your favourite thing to do with greens?! ๐Ÿฅฌ

I make a LOT of kale chips!! Give them a romantic massage with lots of olive oil, sprinkle seasonings of choice, I like garlic powder, salt and pepperโ€ฆ but sometimes get adventurous with paprika, gochugaru, sesame oil or nutritional yeast.

I also love adding greens to scrambled eggs, curries, soups or frittatas, or even just sautรฉing with olive oil or ghee and a s**t load of garlic and salt!

Hey there! While we often connect over all things health and wellbeing, I thought Iโ€™d start to share a bit more of a behind the scenes glimpse of who I am outside and beyond the world of nutrition!๐ŸŒฟ๐ŸŒˆ

When I'm not diving into the science of holistic health, you'll likely find me somewhere outdoors, chasing sunshine and adventure with my beautiful quirky rescue dog Daffy. I love curling up in the sun with a book, going on weekend adventures with our camper trailer, working out at the gym then hitting the sauna, and enjoying an occasional sunset gin in good company. ๐ŸŒ…๐Ÿธ

Nature is my ultimate sanctuary. ๐ŸŒณ๐Ÿƒ Whether it's going for a run or hike with my partner or friends, surfing, camping, or simply sitting outside with a cuppa, the calmness and the wildness of nature always recharges. The more remote the better in my books! It's where I find clarity, inspiration, and a deep sense of connection with the world around me. ๐Ÿต๐ŸŒฑ

Oh, and let's not forget my love for exploring food, working on the farm and playing a role in the whole farm to table produce chain, or checking out local farmer's markets and experimenting in the kitchen. ๐Ÿฅ‘๐Ÿ… There's an undeniable joy in crafting nourishing meals from fresh, vibrant ingredients. Plus it's my one creative outlet! A chance to blend flavors and colors into a masterpiece on a plate. ๐Ÿ‘ฉ๐Ÿปโ€๐Ÿณ๐Ÿด๐ŸŽจ

If I had to sum up my personality, it would be a blend of curiosity and empathy, with good sprinkle of lightheartedness. ๐Ÿ”ด๐Ÿง… Pickled Red Onions ๐Ÿง…๐Ÿ”ด

Onions are in season right now and there is an abundance at the farm! I brought some home and decided to pickle some for my dadโ€™s birthdayโ€ฆ and kept a jar for us of course too! Theyโ€™re so delicious!

Ingredients:
- 1 medium red onion, very thinly sliced
- ยฝ cup water
- ยผ cup distilled white vinegar
- ยผ cup apple cider vinegar or additional white vinegar
- 1/4 cup sugar (coconut and brown sugar)
- 1 teaspoon salt
- 3 small whole garlic cloves
- Whole peppercorns

Instructions:

1. Prepare the Onions: Peel the red onion and slice it very thinly. Separate the slices into rings and place them in a sterilised clean glass jar.

2. Prepare the Pickling Liquid: In a small saucepan, combine the water, white vinegar, apple cider vinegar (or additional white vinegar), sugar, and salt. Stir over medium heat until the sugar and salt are dissolved.

3. Add Flavorings: Drop in 2-3 whole garlic cloves and a few whole peppercorns to the pickling liquid. This will add flavor to the pickled onions.

4. Pour Over Onions: Carefully pour the hot pickling liquid over the sliced red onions in the jar, making sure they are completely submerged. Use a spoon to press down on the onions if needed.

5. Cool and Store: Allow the pickled onions to cool to room temperature before sealing the jar with a lid. Once cooled, transfer the jar to the refrigerator and let the onions pickle for at least 1 hour before using.

Enjoy! Pickled red onions are ready to use once they have chilled and pickled for at least 1 hour. They can be stored in the refrigerator for up to 2 weeks. Enjoy them on sandwiches, salads, tacos, or as a tangy garnish for your favorite dishes!

Itโ€™s been a little while since Iโ€™ve introduced myself and thereโ€™s always lovely new faces to say hello to! ๐Ÿ‘‹๐Ÿผ

My nameโ€™s Min, I'm a nature loving adventurer, surfer, and holistic health enthusiast. My journey in health and nutrition began as a sporty kid, but my true passion for wellness emerged later in life.

My 20s took me on a bit of a wild journey around the world, down some fun (but arguably questionable!) roads which lead to a whole lot of self growth and then a wild journey of a more internal nature! ๐ŸŒ

Traveling the world definitely opened my eyes to the power of natural foods as medicine, but it also led me down a path of personal health challenges. Through these experiences, I discovered the profound connection between nutrition and mental wellbeing, which Iโ€™m incredibly passionate about. The inner workings of the mind and body have always piqued my interest and it was a combination of these things that lead me to study Nutritional & Dietetic Medicine.

In my free time, you'll find me surfing, out running with my doggo, researching, adventuring with my fiancรฉ or simply enjoying quality moments rolling solo (introvert!๐Ÿ™‹๐Ÿปโ€โ™€๏ธ) or with my nearest and dearest. My adventures and travel, from competing in high level sports to working on construction sites, have been some my greatest teachers, urging me to not just survive, but thrive! This was in Canunda National Park in the south east of SA. A hidden gem only 5 or so hours away that I hadnโ€™t explored before!!

The coastline is stunning and it was one of my favourite walks to date! ๐Ÿ˜
