A protein is a strand of 20 amino acids made up in various ways for the body to use for building and repairing. 9 of these amino acids are what are known as Essential Aminos.
Plant proteins are generally missing at least 1 essential amino acid that is required to complete the protein strand for the body to use. Essential amino acids cannot be produced by the body (unless breaking muscle down) so finding a good pairing is key to getting the most out of your carbs (Plants, such as grains, fruits and vegetables) and holding on to our very important muscle.
Broccoli is missing 3 of these essential amino acids which basically means if you only ate broccoli and absolutely nothing else, your muscles would keep you alive until you have no muscle left.
A few examples of great pairing with broccoli are, carrots, sweetcorn, spinach and chia.
