Chewy Carob Brownie Balls that are gastritis and reflux friendly.

Carob powder is a low acidic chocolate alternative and the peanut butter powder is a lot lower in fat making these a great little sweet treat for those with gastritis or acid reflux.

Ingredients:
1 heaping cup of soft dates (really pack them in)
3 TBSP oat flour
2 TBSP maple syrup
3 TBSP carob powder
4 TBSP of PB2 pure powder mixed with
2-3 TBSP of water or until it becomes a runny thick texture
cinnamon for outside coating

1. blend everything together until it becomes well combined and then form into 12 small balls or 6 large ones.
2. in a separate small plate, mix together carob powder and a little bit of cinnamon and roll the balls to coat the outside.
3. let them sit in the fridge for an hour so the texture becomes extra chewy 😍

Weekend bake ideas?

Ingredients:

2 cups medjool dates or pitted dates soaked in boiling water for 1 minute
3 cups of pumpkin seeds
½ cup raw cacao powder
Pink salt
200g dark chocolate plus sea salt plus pumpkin seeds



Method:

Blend base ingredients together, press into a lined tin and cover in melted chocolate
Sprinkle over sea salt and pumpkin seeds.
Freeze until chocolate is solid, then slice and store in fridge.

When your cookie craving is louder than your motivation 👀🍪

Lazy Sunday bakes!!!

Ingredients:
1 1/2 cup roasted cashews
1/3 cup maple syrup
1 teaspoon vanilla extract

Method:
Preheat the oven to 350 °F (180 °C). Line a large baking sheet with parchment paper lightly oiled with cooking oil. Set aside.

Add the cashews to a high-speed blender, and blend them for 20 seconds, stop, scrape down the sides of the bowl with a rubber spatula, and repeat 2-3 times until it forms ground cashew. Don't blend for too long in one go or it turns the cashews into cashew butter. It's okay if you have a few larger pieces of cashews but not too many or the batter won't stick together and remain loose.

Pour the ground cashews into a mixing bowl and add the remaining ingredients.

Stir with a silicone spatula until it forms a sticky cookie dough.

Oil your hands generously because the dough is very sticky. Grab a tablespoon of cookie dough, roll it into a ball, and release it on the baking sheet. Press on it to slightly flatten the ball.

Repeat with the remaining cookie dough, placing the cookies an inch apart from each other on the baking sheet as they slightly expand.

Bake the cookies for 12-14 minutes at 350 °F (180 °C) until just golden brown on the sides.

Let the cookies cool down for 30 minutes on the baking sheet at room temperature. They are soft and firm up on the baking sheet. Then, transfer them to a cooling rack. The cookies firm up as they cool down.

NOTE: You can use unroasted cashews as well but the cookies are way better with roasted cashews.

Zero baking, minimal effort, maximum deliciousness.


Base ingredients:
• 1½ cups mixed nuts (190g)
• 1½ cups soft medjool dates (200g)
• ½ cup smooth, natural peanut butter or almond butter (120g)
• 3 tbsp raw cacao powder
• Pinch sea salt
• 1-2 tbsp water if needed or maple if you want them sweeter

Topping ingredients:
• 4 tbsp melted coconut oil
• 4 tbsp raw cacao powder
• 3 tbsp maple syrup
• Handful of nuts/seeds/freeze dried berries

Instructions

• Add all the base ingredients (except the water) to a food processor and blend until soft and smooth. This might take a few minutes. If it doesn’t come together then add 1 tbsp of water (only add the other one if it doesn’t come together – it will depend on how soft your dates are and which nut butter you use).
• Press down into lined mini brownie tin (or a muffin tin) and refrigerate whilst you make the topping.
• Mix the three topping ingredients together and spoon over the top. Sprinkle over a handful of nuts/seeds and put back into the fridge for at least an hour.
