Here is a lovely recipe from The Happy Pear, Ireland. If we can all increase our vegetable intake to 5-6 serves daily, we will drastically reduce the chronic disease rates in our hospitals. True story!
Here is one of the tastiest dinners we have made in a while. A super tasty version of the Italian classic - ‘Aubergine parmigiana’ (eggplant parmigiana in the US) - it is vegan, gluten free, low FODMAP so great for your digestion and banging with flavour!!

It was so tasty we ate pretty much the full tray of 6 portions between the 2 of us yesterday!! 👍🏼😄💚
