Yummo.🤤 You can pack so much goodness into a smoothie bowl. This one has acai, mixed berries, pea protein, maca, greens powder, baby spinach, banana, and a mix of nuts and seeds on top. 🍓🫐
Didn't make this one pretty, just chucked it all on, but geez it was delicious! Full of antioxidants, which are so important, especially as we get older. They help keep you healthy by fighting those pesky free radicals in your body, as well as having amazing benefits for your skin, helping to slow down the ageing process. Bring that on I say! 😉

Grilled wild barramundi on a bed of charred broccolini & purple and green brussel sprouts that have been sauteed with garlic & tamari, topped with hollandaise & sprinkled with black sesame seeds...delicious!!!

Chicken & Corn Curry Soup 🐔🌽
Recipe below ⬇️

This is one of those easy peasy, chuck together soups when you need something up fast. It is so filling, tasty & nutritious, great for those cooler months!

This is my Mum's recipe, its a winner! I made this easy by using a pre-cooked chook and canned corn, but of course you could poach a whole fresh chicken and use fresh corn for even extra flavour & goodness.

🔹️Chicken corn curry soup🔹️

1 cooked chicken, strip meat & chop finely
2 onions and 2 carrots whizzed/finely chopped
1 bunch coriander finely chopped
4 cloves garlic
1/3 cup soya sauce/tamari
1 can creamed corn
1 can corn kernels
2 cups water
Salt and pepper
4 Tsp curry powder

Sauté onion and carrots. Soya sauce , curry powder and garlic for 5 mins
Add all other ingredients and simmer for 40 mins.

🍌 Banana & date loaf 🍌 Recipe below👇

This is so simple to make & absolutely delicious! Fresh medjool dates & mashed banana make this loaf super moist and naturally sweet. Medjool dates are a great source of fibre, potassium and antioxidants.

Try this loaf warm with a little butter & a nice cuppa ☕🤤

▪️Ingredients
2 cups wholegrain self raising flour (can use white if that is what you have in the pantry!)
1 teas bicarb soda
1 heaped teas cinnamon
1/4 cup coconut sugar or brown sugar
1 cup milk (coconut/oat/almond or dairy milk)
2 eggs
1 cup mashed banana
150g medjool dates chopped (can use dried dates)

▪️Method
Mix all dry ingredients + dates in bowl.
Mix all wet ingredients in a separate bowl.
Fold in wet ingredients into dry ingredients.
Bake in a loaf tin at 180°c (160 fan forced) for around 40-45 mins.

We are slowly getting there, but there really needs to be more education & awareness of both Adenomyosis & Endometriosis. They can be such debilitating conditions and more common than you think; even in teenage girls.

I have said this before - it is NOT just about what you put in your mouth.

Even though what we choose to eat on a regular basis is very important, if you do not address other areas of your life that may be out of balance, your whole wellbeing can (and will) suffer..eventually. Never feel guilty for taking time out to look after your own health & wellbeing - mind body & soul.

The secret to a good stir fry is to cook your veggies and meat separate! Stir fry veg for a couple of mins then put aside. Make sure the wok is nice and hot and cook meat in small batches. Then add altogether with your sauces.

I love a good stir fry 😋

I use a basic recipe by the late Lady Flo that I have been making for over 20 years with just 5 ingredients - 2 1/4 cup good quality SR flour, pinch of sea salt, a tbls butter, 1/2 cup sugar/xylitol & 1 cup mashed pumpkin. Delicious, especially with a dollop of cream! 😉

So much better than store bought versions that often contain margarine & over 15 other ingredients. Taste waaay better and super easy to make too! 👍

It is International Hummus Day!
Ever made hummus yourself? Easy peasy, give this one a whirl!

Hummus would have to be one of my fave things to eat, and boy it really packs a nutritional punch! Full of protein, calcium (use unhulled sesame seeds) iron, fibre & good fats, it is a wonderful snack to help balance blood sugar levels & keep you sustained throughout the day. It is so easy to make & is a wonderful accompaniment to vegetable crudities or middle eastern dishes. For vegetarians, try with some brown rice crackers to receive a complete protein hit.
Here is my basic recipe below, you can add chilli or whatever you like to jazz it up. Give it a go, delicious! ☆Heavenly Hummus☆
1 can organic chickpeas (or cook your own chick peas if you desire)
2 tbls unhulled tahini
Pinch good quality sea salt
2 garlic gloves crushed (I had no fresh garlic on hand so used a paste)
Juice of 1 lemon
1/4 cup Australian extra virgin olive oil
Paprika or cayenne pepper (optional)
•Method•
Place all ingredients in blender or processor and blend until thick and creamy.
