See below how to make this quick, easy and delicious Fresh & Fruity Chicken Salad 😋

Ingredients:
- 2 cups mixed lettuce leaves
- 1/2 cucumber, sliced
- 1/2 red capsicum, thinly sliced
- 1/2 mango, diced
- 1/4 cup pomegranate seeds
- 1 cup shredded BBQ chicken (skin removed)
- 1 small tomato, diced
- 1 tbsp olive oil
- 1 tbsp fresh lemon juice
- 1 tsp honey
- Salt & pepper, to taste

Method:
1. In a large bowl, combine the lettuce, cucumber, capsicum, mango, pomegranate seeds, shredded chicken, and tomato.
2. In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper.
3. Drizzle the dressing over the salad and toss gently to combine.
