Sunday dinners don’t have to be complicated to feel like a proper meal 🤍

These sweet & sour pork ribs are one of those “set it and forget it” kind of recipes… and the flavour at the end is so worth it.

Fun Friday looked a little different over here 🤎🥜

Okay I know it’s not technically baking… but watching dry, blanched peanuts turn into smooth, creamy peanut butter was actually so satisfying 😍

Something about seeing it go from crumbs → paste → silky smooth just hits different 🙌

This video was me trying to see my beauty again.

And if I’m honest… that’s been really hard lately.

Since July, my body has been trying to adjust to life without my lap band — something I had done when I was 15, without fully understanding the long-term impact it would have on my health.

Now I’m living through that reality.

I’ve gained weight, and I’ve been told I have 2 months to lose a significant amount — otherwise my reflux could worsen and delay (or even stop) the chance of bypass surgery.

And the hardest part?

I am trying.

For those who know me, you know I don’t just “let things go.”
I swap foods, I make better choices, I’ve cut out things I love (yes… even iced coffees).
I’ve started shakes again, even though diets have made me feel sick in the past.

My whole life has felt like it’s been lived on the scales… and I’m exhausted.

The only real changes lately have been:
No late night snacking (and choosing better options when I do),
And slowing down physically — because after my ankle surgery, even an hour walk leaves me swollen and in pain the next day.

So this video…
wasn’t about confidence.
It wasn’t about a transformation.

It was about trying.

Trying to look at myself and not immediately pick apart what I see.
Trying to find something kind instead of critical.
Trying to remember that I am more than my weight, more than a number, more than a timeline.

Right now, this is just real life.
Messy, emotional, frustrating… and overwhelming.

But I’m still here.
Still trying.
And learning, slowly, to be a little kinder to myself 🤍

While making the Speculoos recipe on Cookidoo®, I needed a quick substitution. Instead of running to the shop, I milled brown sugar in the Thermomix until it reached a fine icing-sugar consistency.

It only takes seconds and worked perfectly in the recipe.

One of the things I love most about the Thermomix is how easy it is to adapt recipes with what you already have at home.

Dinner tonight was light, fresh, and so easy 👌

I love how flexible these recipes are — I made a few simple swaps with what we already had:
• skipped the potato
• used leftover pumpkin purée from Sunday’s pizza 🎃
• stirred it through leftover Noni Jenkins Pad Thai (so good!)

Served with a fresh spinach + rocket salad and it was the perfect quick dinner 💚
