• Sweet Potato + Chicken Soup with Pasta & Veg •

Happy Saturday, folks! 👌
If you're looking for a recipe for a chilly Friday evening, then look no further.

The ingredients you'll need:
• 8 chicken drumsticks.
• ½ a large sweet potato — or if you can find a small sweet potato, you can use the whole one, sliced thinly.
• 2 rashers of streaky bacon, diced 🥓
• ½ a leek.
• 1 small brown onion, diced.
• 1x 1L carton of chicken stock — we used the coles brand "REAL chicken stock". 🐔
• Salt + Pepper to taste. 🧂
• 1 tsp of Paprika — we used smoked.
• 1 tbsp oil.
• 1 tsp of roasted minced garlic
• 250g spiral pasta
• 2 ½ tpsb butter
• 1 ½ cup milk (add more if need be)

Optional garnishes:
• 1× small bowl of finely grated cheese
• 1× small bowl of thinly chopped spring onion.
• Lemon juice 🍋

The method:

• in a large baking tray, place the drumsticks and season with a bit of salt and pepper and place them in the oven on 190⁰c.

• While your chook is in the oven, in a large + shallow frypan, heat the oil and add the diced onion and leek, stirring occasionally so it doesn't stick to the bottom.

• once your onions have become translucent, throw in your bacon and contuine stirring often so it doesn't stick. Once this has all come together, add in the thinly sliced potatoes, followed by ½ the carton of chicken stock, and reduce the heat so it can simmer.

• by this point, your chicken drumsticks should be cooked on one side, remove them from the oven and set on a heatproof surface, such as a chopping board or the stove top, depending on the style.

• Rotate your drumsticks and add in the other half of the chicken stock, placing back in the oven for 15-20 mins to cook further.

• once your drumsticks are completely cooked, take them out of the oven and remove them from the stock liquid and place them in a bowl. Pour the remaining liquid from the oven pan into the pot, and continue stirring occasionally.

• remove the chicken meat from the drumsticks and shred. Once completely shredded, add the meat to the pot and let it simmer on a medium-low heat.

• while the soup is on low simmering heat, gently bubbling away, in another pan heat your butter and gradually add the flour, creating a white sauce base, and slowly add in your milk gradually.

• Once your white sauce has reached the thickness of your liking, turn the heat off and pour the sauce into the chicken soup. Stir + cook for another 3 minutes, letting it all combine.

Serve with some warmed bread + butter. Add your optional toppings and enjoy! 👌

HANDY HINTS:
• Keep a sink of hot soapy water at all times.
• Be sure to clean as you go.
