Thank you to our 16 beautiful ladies that joined us today for our Fermented Beverages Workshop!

We had a very busy day learning (and tasting!) all about the fizzy, living drinks that are good for us and also taste divine. We learnt about two different types of kombucha, water kefir, milk kefir, beet kvas and oxymels. All our lovely participants took home three bottles of their own specially selected creations.

Thank you to the CWA Dungog-Clarence Town Branch - Country Women's Association for the beautiful venue, Dungog Wholefood Co-op for the fresh produce and the Westwood Dungog Providores for the delicious free range chicken we used for our pickle-brine fermented skewers we served for lunch.

Traditional cultures often included fermented foods that supported gut health and digestion. By following these practices in our modern life, we can improve their digestibility and increase nutrient absorption.

Grains require careful preparation because they contain a number of chemical compounds known as antinutrients

Fermentation helps to break down these antinutrients, making them easier to digest. Some examples of those are gluten, phytic acid and enzyme inhibitors.

Phytic acid, for instance, is an organic acid in which phosphorus is bound. It is mostly found in the bran or outer hull of seeds. Untreated phytic acid can block the absorption of essential nutrients in the intestinal tract. This is why a diet high in improperly prepared whole grains may lead to serious mineral deficiencies and endless health problems.

Moreover, fermentation increases not only the availability of nutrients, including vitamins, minerals, and antioxidants, but it also provides probiotic benefits, where the beneficial bacteria produced during fermentation support digestive health, immune support, mental health, skin health, nutrient absorption, and overall well-being 💖.
