My journey in to health and wellbeing has been an up and down journey. When I was 16 I developed bulimia and suffered for many years culminating in my being terrified to even put food in my mouth. I became obsessed with needing to know exactly what was in the food and how far did I have to run to get those calories off. Being thin I thought was the ultimate goal to perfection. I am a person who li

kes to have control over my body; but back then what I didn't realise, was that bulimia was in control not me. When I became aware of what was in fact going on, i started to explore and ask why it was that I equated being thin to being perfect. What was perfection? I would love to say it as a Bling moment that I became free of bulimia, but in fact it was many years of support and soul searching to get to where I am now. To come to the realisation of what was right under my nose all the time, the fact that I am perfect just the way I am. Through the many years of self development my absolute terror of food started to transcend into a passion not a fear of food. Now I love cooking and experimenting with food. I love eating well, non processed, organic and whole foods. One thread of my philosophy is "Eat like your grandparents ate" . Don't eat foods that come in boxes and have ingredient numbers that you don't know or understand. I have always had a passion for helping people so I became a Nurse. i still love nursing but the next stage of my journey in supporting others from what I have learnt has taken me to where I am today. Food for the soul. Food for your life. Chocolate lemon cafe was created from the fear of food to true passion and I will ensure a happy balance is always my on my mind when sharing this journey with u. We have been given this amazing planet with incredible produce and everything we need. I am committed to sharing my passion for good food. So i created a cafe where I can now share my passion and love of food in a balanced and nurtured way. Life is all about balance. The world works that way as do our bodies. I just want to shout out to Dave from down at the flower tent. He is one of the kindest humans I know. I went down to buy flowers today and we got talking as he knew David my husband. He asked how he was and I told him he passed away last November. He was guttered and would not let me pay for my flowers and said to pop past the factory as he wanted to make me something beautiful. These are what got handed to me by his lovely workers, busily creating bunches just like these. There are not enough David’s in the world. His belief is if u give to the universe the universe gives back to you. His right. I gifted Sarah McCall from Organic Fix flowers today as she is another human that is kind and selfless. Be kind, u honestly have no idea what someone is going through. Kindness and a cheeky smile to a stranger could just very well make their day 🙏🏻

I have over the last couple of weeks discovered that many of you did not know why I decided to closed chocolate lemon after it being such a dream. But what I realised is that family come first. I was finding that I was not doing anything properly and doing everything in half. This is not me And not many of you know that my husband was dying and I chose him as I should. He died about three weeks ago and I could not be happier that I chose to close. I may be back one day but I also just wanted everyone to know that I didn’t give up,I didn’t quit but I chose. I chose my husband. I chose my family and now I choose to grieve and still be with my family. Chocolate lemon was an amazing chapter in my life and I will never forget it nor I forget anyone that supported me,loved me,bought from me, visited me and was just there for me. On this Christmas love the ones you have in your life as you never know when they won’t be there any more? Enjoy them and really be there. Put your phone down and be with them. Love Michelle xx

BLACK BEAN BUGERS

Friday is a great day to have take away. So instead of that how bout make your own burgers. So much more satisfying.

1 can of black beans
¼ cup chopped red onion
¼ cup chopped fresh spinach leaves
1 T. fresh squeezed lime juice
2 T. of chopped red capsicum
1 egg
¾ tsp. cumin
1 garlic clove
Himalayan salt
Pepper
½ cup + 2 T. gluten free bread drums + ⅓ cup gluten free breadcrumbs

-HOW TO -

-Drain and rinse can of black beans and pour the beans and the remaining ingredients into the food processor: ¼ cup chopped red onion and ¼ cup fresh spinach, 1 T. fresh squeezed lime juice, 2 T. of chopped red capsicum, 1 egg, ¾ tsp. cumin, 1 garlic clove, ½ tsp. salt, ¼ tsp. pepper and ½ cup + 2 T. gluten free breadcrumbs.
-Turn on the food processor for 1 minute (scraping the sides halfway through) until you get a thick and consistent puree.
-Pour another ⅓ cup of gluten free bread crumbs on a large plate.
-Spray your hands with some coconut oil and shape a patty in the palm of your hand.
-Coat the bottom and top of each patty with the extra bread crumbs and if you can, refrigerate them for a couple of hours to harden up.
-To fry, heat up 2 T. of olive oil in a heavy bottom pan on the stovetop.
-Cook on medium-high heat for about 2 minutes then flip them over for another 2 minutes.
-Keep on flipping them if you like them darker

Serve on a gluten free bun with your favorite burger toppings.
