Add them to a dish, leave them in the fridge and wait 6-8 hours!

WHAT SHOULD I BRING FOR CHRISTMAS LUNCH SERIES
This one is nice and basic, but does not skimp on flavour!

Follow for more healthy recipes

Watermelon & haloumi salad

1/4 seedless watermelon
1 tomato
225g block of halloumi
1/4 red onion
Handful of mint leaves chopped (or ripped in my case)
Salt
Sumac

Olive oil
1 Lemon juiced
Sprig of thyme

Method:
1. Slice and dice the salad ingredients and layer in a bowl/plate for serving
2. In a pan, fry off your halloumi until each side is golden brown.
3. Layer the halloumi over the salad, top with a pinch of salt.
4. In a jar, mix up the dressing ingredients, and pour over salad when it’s time to serve and sprinkle with sumac for some an extra citrus flavour.

Creamy hummus with herby salsa & pomegranate
Mix equal parts

- hummus
- Greek yoghurt
- 1 clove garlic

For the salsa
- cucumber, diced
- Cherry tomato’s, diced
- Red onion, diced
- Pomegranate
- Handful of chopped parsley & mint
- 1/2 lemon juiced

Optional
- Sumac
- Olive oil

Method
1. Combine your salsa ingredients
2. Combine the hummus, garlic & yoghurt
3. Layer, top with olive oil & sumac & enjoy with crisp bread!

Chaos In the kitchen in with us as always. Save this caramel slice!

Caramel slice

Base
- 1c almond meal
- 1.5 scoops choc malt
- 1 tbsp coconut oil
Caramel layer
- 3 tbsp rice malt syrup
- 1 cup dates
- 1/2 cup almond butter
- 1 tbsp coconut oil
- 1 tbsp rice malt syrup
- 1/2 cup collagen
Choc top
- 80g melted dark chocolate
- 1 tbsp coconut oil

Combine base ingredients and press into a lined loaf tin and place into the freezer to set.
Soak dates in boiling water until they soften, strain the water. Add to a blender with the rest of the caramel ingredients until smooth then pour over base and set in the freezer for 15-30 minutes.
Melt the chocolate, pour over the caramel layer, sprinkle with salt and set in the freezer.
Slice into 12 and store in the freezer.

If I wanted to work on someone’s gut and skin health, particularly their barrier, this is what I would make for them. And if you are someone like me who struggles to drink kefir this is the way to incorporate it into your diet. Kefir is a heavily researched fermented milk drink, that is like yoghurt but more liquid. Chia seeds are a rich source of dietary fibre and omega 3 fatty acids, combined with probiotic rich kefir, this is the perfect recipe to help support the gut-skin axis.  
 
Mango Chia skin pots
 
2 C plain or vanilla kefir
½ c chia seeds
Flesh of 2 mangos
3 tbsp honey
Top with h**p seeds.
 
 
Add chia, kefir and honey to a bowl and combine. Let the chia seeds absorb the kefir and stir at regular intervals. Add the mango, then place into jars to store in the fridge!

I posted this salad on my stories the week before last and you guys wanted it so here it is 🫡🫡

Great for supporting gut health and rich in cruciferous vegetables to help support healthy hormone metabolism!

Gochugaru chicken & kimchi salad
 
¼ green cabbage
1 cup edamame
3 spring onions chopped
½ red capsicum
¼ bunch of coriander
1 Lebanese cucumber
½ cup kimchi
1 tbsp sesame seeds
 
For the chicken
2 chicken breasts
1 tbsp gochugaru
½ lime, Juiced
2 tbsp fish sauce
1 tbsp sesame oil
 
Dressing:
1 tbsp gochugaru
½ lime, juiced
2 tbsp sesame oil
1 tsp rice wine vinegar
3 tbsp fish sauce
 
1.    In a bowl, combine gochugaru, lime juice, fish sauce, and sesame oil to make the chicken marinade. Add the chicken breasts and coat well. Let marinate for at least 20 minutes or refrigerate up to 2 hours.
2.    Heat a non-stick pan or grill over medium heat. Cook the chicken for 5–6 minutes on each side until golden and cooked through. Remove from heat, rest for a few minutes, then slice thinly.
3.    Finely shred the cabbage, thinly slice the red capsicum and cucumber, and chop the spring onions and coriander.
