If you’re a bit like me and think that cakes taste better before they’re cooked then you’ll love this recipe. You’ve probably seen the cookie dough flavoured ice cream in the supermarkets? Well this version is packed with plant fibre and protein and some great healthy fats too 💚🌻
It’s based on chickpeas. You wouldn’t guess by tasting it though so try it out and see what you think.
Chickpeas are high in prebiotic plant fibre which is food for your gut bacteria. This helps with digestion and gut health, as well as maintaining a healthy weight and lowering cholesterol. Along with other nutrients such as potassium and antioxidants (isoflavones and polyphenols), they can aid blood pressure control and reduce risk of chronic diseases, particularly heart disease. Chickpeas are packed with essential vitamins and minerals, including folate, iron, magnesium, phosphorus, and B vitamins. Folate is particularly important for DNA synthesis and cell division, making chickpeas beneficial for pregnant women.
1 cup of chickpeas contains 12g of fibre (women need at least 25g/day, men at least 30g/day) and 15 grams of protein, making them great for stabilising blood sugars and building and maintaining lean muscle. Not to mention the calcium, magnesium and phosphorous being perfect to build strong bones 💪

Have you heard of malt extract? Made from barley (so, not gluten free) it is a delicious sweetener with some great nutritional properties that outshine honey or sugar. Table sugar is 99.8% sugar with no other nutrient value, honey is about 80% sugar while malt extract is 50% sugar and 25% complex carbs for sustained energy.
Malt extract contains amino acids and vitamins, coming in at 5% protein and a source of vitamins B1, B2, B3, B6 and potassium.
So have a go at malt extract to replace honey or sugar and enjoy the different flavour and health benefits it brings. It’s not about adding more sugar to your diet, just exploring some simple swaps that provide extra nutrition 💚🌻
