Soba noodles + leftover raw veg mix = an easy, delicious meal.

I often freeze leftover raw veg mix if we don’t use it in time, and it works perfectly in a quick stir-fry. Add ginger, garlic, lime, and soy sauce for loads of flavour.

Enjoy it hot, or cold the next day as a noodle salad. Add your favourite protein and get creative with what you have on hand.
