Each Friday we have coined the day FUN FRIDAY at the clinic, which in it-self presents Fun Yummies to comunally enjoy accompanied with Peppermint Green Tea blend, and, Rose and Jasmine tea too, with my freshly baked coconut and maple cake. šššššššš
In a bowl:
About 1/2 cup brown sugar and 1/2 cup maple syrup.
4 eggs
Mix well.
Adds 3/4 tin coconut cream (reserve the rest to pour over the hot cake)
1 cup coconut (I like shredded for the consistency but you can use Desiccated if you like)
1 cup SR flour (GLUTEN FREE If you choose)
2 TABLESPOON pure coconut oil.
Mix
Place in tin/tray sprinkle a little COCONUT bake at 160deg for about 30mins until knife comes out clean.
Pour the coconut milk and maple syrup drizzle over hot cake š
VOILA
