I felt like something a little different today for breakfast…
Inspired by I made a chocolate Beetroot breakfast slice.
It was delicious- quite moist, not like cake but I like it like that. ** Can confirm I went back for 3rds!

1x can coconut milk
2 tablespoons chia seeds
1 teaspoon apple-cider vinegar
115 g (1 ⁄ 3 cup) maple syrup
80 ml (1 ⁄ 3 cup) olive oil
1 teaspoon vanilla extract
pinch of sea salt
200 g (2 cups) quick oats- I changed to 1x cup rolled oats, 2/3 C buckwheat and 1/3 walnuts - blended up.
40 g cacao powder
1 teaspoon bicarb soda (baking soda)
1 teaspoon baking powder
2x small peeled and grated beetroot
2 medium pears, peeled and diced small
60 g dark chocolate chips (these can be subbed, I used grated cark choc)
1–2 tablespoons raw cane sugar (optional)
yoghurt, or ice cream, to serve

Preheat the oven to 160°C fan-forced and grease a 20 × 26 cm (8 × 10¼ in, or thereabouts) ovenproof dish with coconut oil or butter.

Combine the coconut milk, chia seeds and apple-cider vinegar in a bowl and allow it to curdle. Add the maple syrup, olive oil, vanilla, oats and a pinch of sea salt to the wet mixture. Sift in the cacao powder, baking soda and baking powder and give it a big stir. Add the beetroot and choc chips and give it another big stir, then fold in the pear.

Pour the mixture into the prepared dish and sprinkle with sugar, if using. Bake for 1 hour, rotating your tray about halfway through cooking.

Remove from the oven and allow to sit for 10 minutes before scooping from the dish and topping with spoonfuls of yoghurt.

2025 was a year of growth, deeper understanding and feeling more aligned - personally and professionally ✌️

Professionally it has been my biggest growth year. I have supported and connected with so many incredible individuals- reinforcing why I love what I do 🤗

I spent the year studying and deepening my microbiome knowledge with Jason Hawrelak to become an Advanced Microbiome Practitioner.

Spent an amazing weekend in Sydney for the Nat expo and completed many more online seminars.

Overcame my fear of public speaking to present at 2 events.

Personally it was an emotional year for me- with my beautiful girl graduating Primary School (still not ready for this) and my youngest about to start school. My oldest (14) visited Taiwan for a school trip that he funded mostly himself 💪
I wish I could freeze time and keep them young 🙏 We had some beautiful family times, which I will continue to treasure ❤️

Im so excited to see what 2026 throws at me 🫣 I’m looking forward to meeting and supporting more incredible humans and continuing to grow and learn- both professionally and personally.

✨My intention for 2026 is to create more space for reflection and quiet, which does not come easy for me 😝

This is why I love HTMA testing for kids and teens, even adults- it shows us the why behind symptoms that have been brushed off for years. When minerals are out of balance, growth, mood, energy, hormones, cognition and digestion all take a hit. And in this case, the pattern was loud and clear.

What matters most now is going slowly.
We don’t detox a depleted child.
We rebuild first- gently supporting gut function, nutrients, minerals, nervous system stability and liver clearance.

Nutrient therapy isn’t fast, but it is powerful. When the body finally gets what it needs, it starts to correct itself- growth improves, mood settles, energy returns, and the whole system becomes more resilient.

This is the kind of case where steady, patient work creates life-changing results.

Having coffee on an empty stomach might feel harmless, but it gives your body a sharp cortisol hit, which can mess with hormones, blood sugar, mood and your gut.

Eating something first helps to:
• Protect your gut lining
• Keep blood sugar stable throughout the day.
• Reduce jitters and anxiety
• Support hormones, especially if PMS or perimenopause are in the mix

And it doesn’t need to be a full breakfast- a boiled egg, a little yoghurt, nut butter on fruit, leftover pikelet… anything small counts.

If you’ve been getting morning nausea, shakiness, irritability or that wired-but-tired feeling, try a bite of food before your coffee.
Your system will feel the difference.

Loving this range of gummies- they’re a massive hit with my younger patients (and a few cheeky adults 😝).

If you’re battling to get supplements into your child, and the supermarket gummies just aren’t cutting it, these are an absolute winner🏆
