King Fish ❤️

A top choice for many cooks for its sweet meaty texture, great raw for a crudo entree or seared on the skin side until the flesh is medium, and great with asian flavours too.

Some of my favourite ways over the years

- x.o sauce, chicken broth, okra
- pear dashi, seasonal vegetables
- cucumber, parsley oil, sweet lime puree

Working unsupervised on Wednesday as usual, slinging out the last crepe for the evening after an eventful day 🤣.

The decadence...

Have you had our Black Forest crepe yet? Loaded on the inside with Kirsch cream & sour cherries , the outside starts off with an airy but rich chocolate mousse, choc shavings, house marshmallow, maraschino cherry and sorrel and finally dusted like its an illegal party 🍒😎
