* Basil pesto ⁣
* Pasta⁣
* Grated raw broccoli⁣
* Sun dried tomatoes ⁣
* Pumpkin seeds⁣

* Boiled/steamed/roasted broccoli heads + stems, cut into bite size bits (quick option- ~4 min boil then drain and rinse) ⁣

* Sweet potato baked with paprika ⁣
* Guacamole⁣
* Cabbage⁣
* Greek yoghurt⁣
* Paprika⁣
* Canned tuna (I ran out and used smoked salmon today)⁣

Fish tacos getting me through iso🌮⁣

Crumbed flathead + guacamole + slaw + charred peppers + kewpie mayo + sriracha + lime🌮⁣
⁣
Fish crumb:⁣
* Panko crumb⁣
* Oregano ⁣
* Paprika⁣
* Cumin⁣
* Salt⁣
* White pepper⁣
* Garlic salt/powder⁣
* Coriander seed ground⁣
Coat fish in egg + milk to help the crumb stick to fillets. Shallow fry. ⁣
⁣
Slaw:⁣
* 1/3 cabbage (purple is more aesthetically pleasing), thinly sliced⁣
* Spring onion, thinly sliced⁣
* Lime juice ~1/2 lime⁣
* Kewpie mayo ~1 tbsp⁣
* Olive oil ~1 tbsp⁣
* Salt ⁣
⁣
Charred peppers:⁣
* Capsicum, sliced⁣
* Olive oil⁣
* Salt⁣
Add peppers to a hot pot, leave as is so they char up (don’t stir them). Once they have charred (~4 mins) add a drizzle of oil + salt, cover with a lid to soften peppers and keep any smoke in. Remove from heat. ⁣

* Red onion⁣
* Lime⁣

Keeping myself occupied because apparently it’s too early for dinner..?⁣

Banana and Chocolate Drop Muffins:⁣
3 x ripe bananas, mashed⁣
1 x block of dark chocolate⁣
1 1/2 c flour⁣
1/2 c brown sugar⁣
70g butter, melted⁣
1 tsp baking powder⁣
1 tsp baking soda⁣
1/2 tsp vanilla extract⁣
1 egg⁣
pinch of salt⁣ + cinnamon
Oil to grease muffin tins⁣
⁣
1. Mix dry ingredients together ⁣
2. Add in all wet ingredients and mix⁣
3. Fill muffin tins with mixture and push a square of chocolate into the middle of each⁣
4. Bake at 175C for 20-25 mins⁣
⁣
⁣

Another great vegetarian recipe to add to your list of meat-free meals. I LOVED this recipe and it took minimal effort to prepare😌⁣

Recipe note* To make life easier, I used 1 tsp of dried chilli flakes and 1 1/2 tsp of dried oregano. No need to peel any of the eggplant skin off in step 1 either! ⁣
