Stuck on what to cook and looking for something warmer? This Chilli Con Carne is flavourful, easy to make, and perfect for meal prep.
Serves: 4
Time: 30 mins
INGREDIENTS
1 tbs olive oil
1 brown onion, diced
2 garlic cloves, crushed
1 red capsicum, diced
500g beef mince
1 tbs cumin
1 tbs coriander
1 tbs smoked paprika
1 tsp oregano
½ tsp chilli powder
400g chopped tomatoes
2 tbs tomato paste
400g kidney beans
400g corn kernels
Salt & pepper
Fresh coriander & chilli to serve
METHOD
1. Cook onion, garlic & capsicum in oil (4–5 mins). Add mince and cook through.
2. Stir in spices, then add tomatoes, paste, beans & corn.
3. Bring to a boil, then simmer for 20 mins.
