Stuck on what to cook and looking for something warmer? This Chilli Con Carne is flavourful, easy to make, and perfect for meal prep.

Serves: 4
Time: 30 mins

INGREDIENTS
1 tbs olive oil
1 brown onion, diced
2 garlic cloves, crushed
1 red capsicum, diced
500g beef mince
1 tbs cumin
1 tbs coriander
1 tbs smoked paprika
1 tsp oregano
½ tsp chilli powder
400g chopped tomatoes
2 tbs tomato paste
400g kidney beans
400g corn kernels
Salt & pepper
Fresh coriander & chilli to serve

METHOD
1. Cook onion, garlic & capsicum in oil (4–5 mins). Add mince and cook through.
2. Stir in spices, then add tomatoes, paste, beans & corn.
3. Bring to a boil, then simmer for 20 mins.
4. Season, serve and enjoy! Save the rest for easy meals throughout your busy week.

Busy schedule? You don’t have to sacrifice quality food. These Ham, Tomato & Pesto Muffins are quick, easy, and perfect for busy mornings or grab-and-go snacks!

Time: 20 mins
Serves: 6

INGREDIENTS:
1 tsp olive oil
12 eggs
150g ham, chopped
250g cherry tomatoes, halved
½ tsp salt
½ tsp pepper
½ cup basil pesto

METHOD:
1. Preheat oven to 180°C and grease a 12-cup muffin tray.
2. Whisk eggs, then mix through ham, tomatoes, salt, and pepper.
3. Fold in ÂĽ cup pesto, pour into tray, and top each with remaining pesto.
4. Bake for 20 minutes or until set.

Enjoy fresh or store for an easy, low-carb option throughout the week.
