Looking for a new recipe for dinners? Try this delicious and simple spicy corn cob recipe! perfect for a healthy⁠ meal with a kick.⁠


Preparation Time & Cooking time – 50 mins⁠
Serves – 4⁠

Ingredients⁠
- 4 corn cobs, washed and halved⁠
- 4 cloves of garlic, crushed⁠
- 2 long green chilies, finely sliced⁠
- 1 tablespoon smoked paprika⁠
- 1 tablespoon Himalayan salt⁠
- 1 tablespoon caster sugar⁠
- Small pinch saffron threads⁠
- 70g butter or Nuttlex⁠
- Juice of 1 lime⁠
- 30g parmesan⁠
- Lime wedge to serve⁠
Method⁠
1. Place corn cobs, paprika, chili, garlic, salt, sugar, and saffron in a large saucepan. Add⁠
enough water to just cover the corn and bring to a boil. Reduce heat to medium and⁠
add butter, then simmer for 10 minutes. Remove the corn and set aside on a plate,⁠
cover with foil to keep warm.⁠
2. Increase the liquid to high heat and boil for 15 minutes or until reduced to 2 cm deep.⁠
Return corn to the pan and toss in liquid to coat well. Remove corn to the plate again and⁠
keep warm.⁠
3. Boil liquid until thick and a glaze forms. Place corn on a serving platter and drizzle with⁠
sauce, lime juice, and cheese. Serve with a lime wedge, Enjoy⁠

Looking for a quick and comforting meal on a chilly day? Look no further than this cozy chicken and tortellini soup! It’s packed with flavor and guaranteed to satisfy your hunger.⁠

Preparation Time & Cooking time – 20 minutes ⁠
Serves – 4⁠

Ingredients⁠
2 tablespoons of Extra virgin olive oil⁠
1 leek pale section only, halved and thinly sliced⁠
4 celery sticks, chopped⁠
2 x bunch of broccolini, chopped⁠
2 cloves of garlic, crushed⁠
6 cups chicken stock⁠
200g ricotta and spinach tortellini⁠
400g chicken breast, cooked and shredded⁠
Salsa Verde⁠
1 bunch of flat leave parsley⁠
¼ cup basil leaves⁠
¼ cup lemon myrtle leaves (if you have fresh)⁠
3 tablespoons of toasted pine nuts⁠
¼ cup extra virgin olive oil⁠
1 teaspoon each of lemon rind and juice⁠

Method⁠
Heat oil in a large saucepan over medium heat and add leek, broccolini, celery, and garlic. Cook for 6-8 minutes until vegetables are tender. Add the stock and bring to a simmer.⁠
Add the tortellini and chicken and cook for 5 mins until the pasta is al dente or just cooked through.⁠
Meanwhile, make Salsa Verde by placing all the ingredients in the food processor and blending until smooth. Divide the soup between bowls and drizzle Salsa Verde on top. Enjoy ⁠

This week’s recipe is Fried rice. A delicious meal perfect for dinner or lunch. Recipe below:⁠

Preparation time – 10 minutes⁠
Cooking time – 30 - 40 minutes⁠
Serves - 4⁠

Ingredients ⁠
3 teaspoons of sesame oil⁠
2 cloves garlic, crushed⁠
2 teaspoons fresh ginger, grated⁠
2 shallots, diced⁠
1 red chilled, diced⁠
200g firm tofu and 300g chicken cut into 2cm cubes (or pork mince if you’d prefer)⁠
3 eggs, beaten⁠
1 cup uncooked wild rice⁠
3 celery sticks, diced.⁠
1 carrot, diced.⁠
1 small red capsicum, diced.⁠
250g bean shoots⁠
400g of kale slaw⁠
1 cup frozen peas⁠
2 tablespoons soy sauce⁠
2 tablespoons Kecap Manis⁠
Fried shallots to serve⁠

Method⁠
Place rice in a medium pot covered with water and bring to a boil, reduce heat slightly, and continue cooking for about 30 -40 mins until the rice is tender. This can be done the day before or use leftover rice.⁠
Meanwhile, heat wok over medium heat and add 1 teaspoon of oil, and add eggs to wok. Cook both sides until browned and cooked through, remove from wok, and drain on a paper towel. Once cooled thinly slice the egg and set aside.⁠
Heat another teaspoon of oil in the wok and add tofu or mince and cook until browned and cooked through, remove from the wok, and set aside.⁠
Heat the remaining oil in wok and add shallots, garlic, ginger, and chili and cook until softened. Then add celery, capsicum, peas, bean shoots, and kale slaw, and stir fry until just tender. Add tofu/mince, rice, egg, and sauces, and stir fry until heated through. Serve with fried shallots on top. Enjoy 😊⁠
