ANZAC Day is a time to remember and honour those who have served, and what better way to commemorate the occasion than with a batch of classic ANZAC biscuits? Here's a simple and delicious recipe to celebrate the day.

Makes: 24 biscuits

Ingredients:
¾ cup plain flour
¾ cup desiccated coconut
1 cup rolled oats
½ cup sugar
100g butter (or 1/3 cup canola oil)
2 tbsp golden syrup
½ tsp bicarbonate of soda
1 tbsp boiling water

Method:
✅ Preheat oven to 150°C or 160°C fan forced.
✅ In a large bowl, combine the flour, coconut, oats, and sugar. Set aside.
✅Melt the butter (or oil) and golden syrup together in a saucepan over low to medium heat.
✅Mix the bicarbonate soda with boiling water and then add the melted butter and golden syrup.
✅Gently stir the wet ingredients into the dry ingredients.
✅Place spoonfuls of the mixture onto a lined baking tray.
✅Bake for 15-20 minutes, or until golden brown.

Whether you're craving a comforting pasta bake or a fresh and zesty chicken vermicelli bowl, these recipes are a breeze to prepare and full of flavour. Here’s what Juliette loves to cook when she's looking for something tasty and satisfying.

Pasta Bake
A quick, hearty meal:
✅500g Pasta (Penne, Rigatoni, Gnocchi)
✅1 Bottle of Tomato Passata
✅500g Minced Beef or 1 Large Canned Tuna
✅5-6 Boiled Eggs
✅Any Vegetables (Peas, Carrots, Mushrooms are Juliette's favs!)
✅Mozzarella
✅Salt, Pepper, & Herbs to taste

Chicken Vermicelli Bowls (2 ways)
Speedy Version
✅Cooked Roast Chicken or Air-Fried Chicken Tenders
✅Rice Noodles
✅Carrot
✅Cucumber
✅Peanuts
✅Mint Leaves (Optional)
✅Nuoc Cham (Vietnamese Sauce)

Extended Version
✅Chicken Marinated in: Lemongrass Paste, Minced Garlic, Lime/Lemon Juice, Fish Sauce, Soy Sauce, Brown Sugar

International Carrot Day: Carrot Cake Cookies Recipe 🥕🍪

April 4th is International Carrot Day, and what better way to celebrate than with a delicious, dietitian-approved treat? These Carrot Cake Cookies are a fun twist on the classic carrot cake - soft, lightly sweet, and packed with a little extra goodness.

Carrot Cake Cookies Recipe
Ingredients:
125g butter, softened
125g cream cheese, softened
1/2 cup caster sugar
1 egg
½ tsp bicarb soda
1 ½ cups plain flour
½ cup desiccated coconut
½ cup finely grated carrot, squeezed dry

Method:
1️⃣ Process butter, cream cheese, sugar, egg, and bicarb soda in a food processor until combined.
2️⃣ Add flour, coconut, and carrot, then pulse to combine.
3️⃣ Transfer to a bowl and place in the freezer for 30 minutes to firm.
4️⃣ Preheat oven to 170°C. Grease two large oven trays.
5️⃣ Roll tablespoons of cookie dough into balls, using extra coconut if sticky. Place 5cm apart on trays and flatten slightly.
6️⃣ Bake for 25 minutes or until golden. Cool on trays before enjoying!

💡 Tip: You can freeze the dough balls and bake them straight from frozen - just add a few extra minutes to the cooking time.

At Therapy Kitchen, we love meals that are simple, versatile, and easy to prep ahead - and Jessie’s go-to Bolognaise Sauce ticks all the boxes!

By making a big batch once a month, Jessie always has a meal ready to go. Just grab it from the freezer in the morning, and dinner is already halfway done!

Bolognaise is one of those meals that can be used in so many ways - whether it’s tossed through pasta, spooned over baked potatoes, layered into lasagne, or even used for nachos. It’s also a great time-saver, with one batch making enough to cover at least one meal a week for a whole month. Packed with vegetables and rich in flavour, it’s an easy way to add extra nutrients to your meals while keeping things delicious and comforting.

Jessie’s basic bolognaise recipe includes:
🥄 Garlic oil (Jessie uses this as she can’t eat garlic & onion)
🥕 Carrots, zucchinis, capsicums, mushrooms
🥩 Beef mince, pork mince, bacon
🍅 Tomato paste, Worcestershire sauce, tins of tomatoes
🌿 Dried herbs, chilli sauce

Simmer it low and slow on a weekend afternoon to make it thick and rich. The result? A deeply flavoured sauce ready to be used in multiple ways!

At Therapy Kitchen, we love making the most of every ingredient. Recently, while making vegetable fritters, a client pointed out that the grated veggies looked like “scraps.” It was the perfect moment to chat about how leftover vegetables can be transformed into something delicious, balanced, and nutritious!

Vegetable fritters are quick & easy, nutritious & balanced and great for reducing waste – what's not to love?

Here’s a simple recipe to try:

🥦 Vegetable Fritters Recipe 🥦

Ingredients:
2 small white potatoes, unpeeled, grated
½ sweet potato, peeled, grated
1 zucchini, unpeeled, grated
1 carrot, unpeeled, grated
½ cup frozen corn, defrosted
½ cup frozen peas, defrosted
½ cup self-raising flour
3 eggs, lightly whisked
½ cup cheese
2 tbsp oil, for frying

Method:
1️⃣ Mix all ingredients in a large bowl until combined.
2️⃣ Heat oil in a frying pan. Add spoonfuls of mixture and cook until browned.
3️⃣ Flip and cook the other side until golden.
4️⃣ Serve as is or with your favourite sauce. Enjoy! 😊
