This was my lunch yesterday, it was so delicious, incredibly easy to make and filled with an abundance of nutrition.

Today I'll be using another portion of the prepared mince to have a stuffed avocado.

I'm kicking off Monday with some really early food prep.

Today I am starting Boost Camp #8 with Bridget's Healthy Kitchen

In fact, they've offered for anyone who's new to Boost Camps an opportunity to start at number 8 so we can do it as a community.

I truly believe my best results came from doing it as a community so I'm really looking forward to this next 4 weeks.

I'm so darn grateful that Bridget, of Bridget's Healthy Kitchen designs meals/recipes to be great "reheat" foods.

This makes Boost Camps so do-able most especially if you are a busy person with work and other commitments.

I've just come home from a morning of work and I'm able to put myself together a really nutritious meal to break my fast.

This is whole foods, all prepared by me a couple of nights ago.

I am by no means a chef, but I have certainly learned to become a good cook.

That's what's so great about Boost Camps, it's the opportunity to hone my skills in the kitchen. And the results are great meals that fuel my body the very best way.

Yesterday my internal voice was trying to sabotage my good intentions. It kept telling me "You don't have time"

But, I decided to squash the voice and simply start at the very beginning giving myself 90 minutes to do as much as I was able.

In that time I completed 4 recipes, I made Sticky Sauce, Tomato Sauce, a mince ragu and pickled onions.

I thanked myself when I got home at 9.20pm at I was able to enjoy this Mexican Bowl, so filled with nutrients and good growing gut bacteria foods.

I was able to achieve all this as the recipes from Boost Camps are quick and easy to complete.

It's Day 1 again........

Yes, for far too many months I've just done the basics, I've only just gotten by with my meal prep and my consumption of food.

The result is no longer being the very best version of myself and the worst part is I actually know what the best version feels like!!!

I'm beginning Boost Camp 4, day 1, today.

It looks like a greater variety of vegetables and meals which result in a healthy gut. This is what's most important, a gut that's filled with GOOD bacteria and microbiome that end up sustaining my body the very best way it can.

I'll see inflammation dissipate in days and my energy levels increase.

Our mindset is a good thing, but it can also be a pessimistic procrastinator at the worst of times.

To see change you have to be willing to change.

And, pick yourself up even if you've fallen 100 times.............

I'm picking myself back up again and I look forward to sharing the journey with you all.

A really big part of my "In Great Shape" journey was about "Choosing my Hard"

For more than a decade I struggled with my health including my weight. It seemed that no matter what I did, what I ate and the amount of exercise I took part in, my body still struggled.

And then I stumbled upon "Bridget's Healthy Kitchen" a program filled with incredible recipes, outstanding education and a community of supportive people.

I had to choose my hard, stay in the same shape I'd been for years OR make changes by following a well proven program?

My choice was to make a change, and then be the change.

Now, at almost 46yrs having shed more than 35kg I have taken up employment in a busy bottle shop. During an average shift of 6hrs I can do roughly 10 000 steps, with many of them carrying cartons and wine. I could never have imagined having the ability to carry out this type of work.

I'm so glad I chose my hard, because it's honestly no longer hard but simply my everyday lifestyle.

They say "variety is the spice of life" and I can attest to that when it comes to "Bridget's Healthy Kitchen" Boost camps.

This here was my lunch yesterday which was an "Instant Muesli"

Think seeds, nuts, coconut, quinoa flakes, spices and a little sweetener. Once it was dry fried I served it with coconut milk and some macerated strawberries.
