🧑🍳 We know that with the busy lives we lead, it can be hard to find time to cook up a delicious family-favourite recipe. But, we’ve got the perfect solution - our delicious Ham, Tomato & Pesto Muffins! They’re full of flavour, easy to prepare, and perfect for getting everyone around the table. 😋 Plus they’re HYPOXI friendly, so even you can enjoy! 🤗

INGREDIENTS:
1 tsp olive oil
12 eggs
150g ham, chopped
250g cherry tomatoes, halved
1/2 tsp salt
1/2 tsp pepper
1/2 cup basil pesto
METHOD:
Preheat the oven to 180C. Grease a 12-cup muffin pan with oil.
Break the eggs into a large bowl, then whisk until well combined. Stir in the ham and cherry tomatoes. Season with salt and pepper and mix through.
Gently fold ¼ cup of basil pesto through the egg mixture then pour into the prepared muffin pan. Top with a dollop of pesto on each muffin.
Bake in the oven for 20 minutes or until the muffins are cooked through.
Enjoy two muffins immediately as one serve.
Freeze remaining muffins in an airtight container for leftovers. These make a great low-carb snack as well as an easy breakfast for busy mornings. Simply reheat and eat.
