National Lunchbox Week, the brainchild of Nutrition Australia, is a fantastic way to kick off the school year. It’s a great time to establish some new lunchbox habits while the excitement of returning to school is still fresh.
The Nutrition Australia website has a wide range of awesome tips and resources, including recipes and videos, and it’s worth having a look at them.

What I love about using left-overs in lunchboxes:
• using leftovers for lunches is quicker to prepare the night before straight after dinner when the food is already out, ready to be packed into lunchboxes, and there is no extra tidy-up
• When School and preschool lunches are all sorted the night before, it saves you precious time in the morning
• The evening meal is most often when we prepare a well-balanced meal with good sources of protein, vegetables, legumes and grains. Using the left-overs for lunch is an easy way to have a balanced lunchbox.
• Saves waste
• Saves time
• It makes for tasty lunches
Remember to include a frozen cold pack to ensure foods remain cool until lunchtime.
And with the wide range of lunchboxes available with good seals and compartments, serving up delicious lunches using leftovers from the night before has never been more convenient. Some even come with a fork or spoon. My fried rice makes a tasty left over lunch, served hot or cold. Make life easier for yourself by serving up leftovers in lunchboxes.
