🧠✨ Grain-Free Kid-Friendly Salmon Cakes Recipe 🐟🌿
These delicious salmon cakes are packed with omega-3s for brain health and are perfect for picky eaters! They're grain-free, easy to make, and a hit with kids.
Ingredients (Makes 6-8 cakes):
1 can (approx 400g) wild-caught salmon, drained and flaked
2 large eggs 🥚
1/4 cup almond flour (or cassava flour for nut-free) 🌰
1/4 cup mashed sweet potato (adds sweetness and texture!) 🍠
1/4 cup finely chopped parsley (optional for added greens) 🌿
1 small garlic clove, minced (or 1/4 tsp garlic powder) 🧄
2 tbsp ghee for frying
Instructions
1️⃣ Prepare the Mixture:
In a mixing bowl, combine the salmon, eggs, almond flour, mashed sweet potato, parsley. Mix well until the mixture holds together.
2️⃣ Form the Cakes:
Scoop out about 2-3 tablespoons of the mixture and shape it into small patties (about 2 inches wide).
3️⃣ Cook the Cakes:
Heat ghee in a large frypan over medium heat. Once hot, add the salmon cakes in batches. Cook for 3-4 minutes per side, or until golden brown and crispy.
4️⃣ Serve and Enjoy!
Let the cakes cool slightly and serve them with a side of veggies, a squeeze of lemon 🍋, or a kid-friendly dipping sauce like avocado mayo or yogurt ranch.
