I’m excited to let you know that I’ve moved to a new position at ACU and will be developing a suite of Culinary Nutrition offerings, a first for Australia and an emerging practice area driving innovation for nutrition and dietetic professionals. I’m working from home still which is good news as I have access to my cookbook collection to write the first subject! Excited to share the details of our 2nd this Friday 24 April 8:30pm. We are continuing with the Chef’s Table series and the episode on Why? With a surge in starter cultures and we can to learn from Nancy’s obsessive love of baking. Also as Nancy is recovering from and doing an incredible job to in LA. If you’d like to join us on the night DM me for details and join in the cooking challenge over the next week. 1. Cook an original Nancy Silverton recipe. 2. Bake her recipe for pizza dough or sourdough bread. 3. Show us your inspiration with mozzarella (you’ll learn why).

Morning lovelies. Hope all is well with you. Two other things I’m learning to love again in the iso. 1. Taking time to read my cookbook collection whilst rediscovering endless cups of Lady Grey tea. 2. Also on the theme of books, going to bed with an audiobook to rest my eyes and joining in book clubs from to brand new - even though Gwyneth and I do not always see eye to eye on science she is a incredible cook and the debut book in the Goop Book Club is so far, remarkable. @ Home

For our challenge with I was going to make something sweet and gooey but then discovered her Cornbake recipe which was perfect for Sunday brunch. A twist on Southern cornbread and corn pudding it’s golden, spongey, sweet-salty deliciousness that reminds me of American big breakfasts with streaky bacon and sunny side up eggs. I still can’t find those spicy, mini pork sausages typical of Pennsylvania Dutch or Amish breakfasts with maple syrup and pancakes. Look out for the details of our next party coming Wednesday.
