Who can relate? You have to try a Cinnamon Scroll whilst it's piping hot still?

Hibiscus & Blueberry Scrolls have you ever seen anything like it? ⁠
⁠

⁠
Ingredients (makes 12 scrolls):⁠
⁠
Dough:⁠
⁠
500 g all purpose flour + extra for dusting and kneading⁠
3 tbsp sugar⁠
2 level tsp dry yeast ⁠
8 tbsp macadamia oil⁠
1/2 tsp salt⁠
2 cups almond milk⁠
⁠
Blueberry filling & icing:⁠
⁠
2 cups frozen blueberries⁠
2 tsp Meraki superfoods hibiscus⁠
3 tbsp water⁠
2 tbsp sugar or erythrit⁠
1 tbsp cornflour⁠
For icing: 100 g powdered caster sugar or erythrit⁠
⁠
Instructions:⁠
⁠
Mix flour, sugar, dry yeast, salt and add oil and almond milk. Stir well until a soft dough forms.⁠
Knead with your hands for about 5 minutes until dough is smooth and elastic.⁠
Dust dough with flour and cover with a damp and clean towel. Set the dough aside to leaven for 1 hour or until doubled in size.⁠
Meanwhile make the filling. Blend frozen blueberries, Meraki Superfoods hibiscus, water, 2 tbsp of sugar and cornflour.⁠
Use 2-3 tablespoons of the blueberry filling and mix with powdered caster sugar until a thick icing forms.⁠
After leaving knead the dough for one minute.⁠
Dust the clean kitchen counter with flour and roll out the dough (1 - 1.5 cm thick) using a rolling pin.⁠
Spread the blueberry filling evenly on the dough. The start rolling it up.⁠
With a sharp knife cut off scrolls every 4 to 5 cm.⁠
Place the scrolls next to each other in a deep casserole dish. Cover with a clean and damp tea towel and set aside for 15 minutes.⁠
Preheat the oven to 150° C top-/ bottom heat.⁠
Bake scrolls for 25 - 30 minutes or until they start to brown lightly.⁠
Let the scrolls cool of for 10 minutes. Then garnish with the blueberry-hibiscus icing.⁠
Enjoy.⁠
Tip: You can store the scrolls for a few days in the fridge. To freshen them up, place them on a toaster, oven or a few seconds in the microwave.⁠

Making your own snack is such a great way to firstly have so much deliciousness on the go & also saves the need to grab for something bad and often wrapped in plastic..

Rainbow Bliss Balls
Ingredients (12-15 bliss balls): Bliss ball basic mix:
• 15 dried apricots
• 1 banana
• 1 cup coconut flour
• 1/2 cup ground almonds (or cashews) • 2 tbsp coconut oil
• 1/2 cup water or plant based milk
Yellow/ Orange:
Add:
• 1.5 tsp Meraki Superfoods Camu Camu + 1/2 tsp for topping; • 5 tbsp ground walnuts
• 1 tbsp crushed walnuts for topping
1. Add Camu Camu and walnuts to the basic mix.
2. Form medium size balls and roll them in crushed walnuts and Camu Camu.
Green:
Add:
• 1.5 tsp Meraki Superfoods Moringa + 1/2 tsp for topping; • 5 tbsp ground pistachio
• 1 tbsp crushed pistachio for topping
1. Add Moringa and ground pistachio to the basic mix.
2. Form medium size balls and roll them in crushed pistachios and Moringa.
Purple:
Add:
• 1.5 tsp Meraki Superfoods Hibiskus + 1/2 tsp for topping; • 3 tbsp almond paste
• 1 tbsp ground almonds for topping
1. Add Hibiskus and almond paste to the basic mix.
2. Form medium size balls and roll them in ground almonds and Hibiskus.
Pink:
Add:

• 1.5 tsp Meraki Superfoods beetroot powder + 1/2 tsp for topping; • 3 tbsp desiccated coconut
• 1 tbsp desiccated coconut for topping
1. Add beetroot powder and desiccated coconut to the basic mix.
2. Form medium size ball and roll them in desiccated coconut and beetroot powder.

Recipe created by using her fav vanilla flavour

Ingredients (serves 1):⁣
Pancakes:⁣
1 medium banana, mashed⁣
1 Tbsp flax meal⁣
1/2 cup plant milk⁣
2 Tbsp grapeseed oil ⁣
2 Tbsp lemon juice ⁣
1 tsp lemon zest⁣
1/2 cup self raising flour ⁣
2 Tbsp vanilla protein from
⁣
Blueberry Sauce:⁣
3/4 cup blueberries⁣
1/4 cup water⁣
1 Tbsp lemon juice⁣
⁣
Method:⁣
- In a bowl, mix the banana flax and plant milk and leave to sit for 5 minutes so the flax starts to absorb the liquid. ⁣
- Add the rest of the ingredients to the bowl and mix. ⁣
- Cook pancakes (you know the drill). ⁣
- In a small saucepan, add all the sauce ingredients and simmer until thick. ⁣
- Stack them up, pour the sauce over the top and enjoy

Yesterday the UN climate change reported a "code red for humanity"

What does this mean?
that our human effects on mamma earth has sped up and the need to reduce green house gases and increase planet health is a MUST for existence. 🌓

šŸMany scientists & activists have been warning of this for years.

When i read this full report yesterday I felt as a human like and a Mermaid floored, like someone has punched me in the stomach 🤮..

I decided to see the GOOD I realised that all of us has shown we can unite on so many fronts over the years, most recently just look at the current pandemic. As humans we have stacks of care, empathy, compassion its in our DNA.

So yes we need:
šŸƒā€ā™€ļørapid change, but that only occurs by everyone coming together to do a little bit, it doesnt happen by a few doing it perfect it happens by us all doing it imperfect..

What are you going to choose are you going to make today a great day? or the same as every other day?

Tips I try to do:
-Walk/bike more places
-Rapidly reduce plastic which cuts fossil fuels
-Switch energy provider to to eco provider (Everyone can do this)
-Switch plugs off at mains
-Plant a Tree
- Follow a prodominat plant based diet
-Think about every purchase where did it come from, how is it made, what sacrifices have been made..
-Opt for reusable items always over single use

I am still learning this, I learn everyday, A single thought that helps me is: "Where i spend my $ is essional what I condone & my values?"

We do not need to be perfect we just need to be aware, be curious, and be better than we was yesterday..
