A sweet, gut-friendly treat that hits the spot 🍫🫐

Rice cakes and peanut butter give slow-release energy and fibre for digestion, while blueberries add prebiotics and antioxidants to support a happy gut.

Dietary: DFO, VO, GF, NF
Serves: 1

Ingredients:
¼ cup melted dark chocolate
H**p seeds (optional)
1-2 rice cakes
2 tbsp pure peanut butter
Blueberries

Method:
1. Pour melted chocolate on baking paper.
2. Press rice cake into chocolate + chill 15 mins.
3. Top with peanut butter, blueberries + h**p seeds.

Chocolate Chip Banana Protein Loaf 🍌

My latest snack obsession - this loaf doesn’t last long in my house 🤤

YOU’LL NEED:
3 ripe bananas
2 eggs
¼ cup almond milk
⅓ cup brown sugar
3 tbsp coconut oil or butter
1 tsp vanilla extract
1–1¼ cups self-raising flour
½ cup + 1 tbsp vanilla protein powder
1 tsp baking powder
¼ tsp salt
⅔ cup dark choc chips

DIRECTIONS:
1️⃣ Preheat oven to 180°C and line a loaf tin with baking paper.
2️⃣ Mash bananas in a large bowl and mix in eggs, almond milk, sweetener, coconut oil, and vanilla.
3️⃣ Fold through flour, protein powder, baking powder, and salt. Mix until smooth.
4️⃣ Add chocolate chips and gently mix.
5️⃣ Pour batter into the lined tin and bake for 40–50 mins or until a skewer comes out clean.
6️⃣ Cool slightly, slice, and enjoy.

Salted caramel date bars 💌

BASE:
165g ground almonds (or almond flour)
50g oat flour
40g pure maple syrup
50g coconut oil, melted
 
CARAMEL:
150g pitted dates*
50ml reserved date water (see method)
50g pure almond butter
30g coconut oil, melted
Flaky sea salt, to taste
 
CHOC TOP:
100g dark chocolate
1 tsp coconut oil
 
*If using partially dried dates (not Medjool), soak them in boiling water for 10 mins and set aside.
 
METHOD:
1. Mix all base ingredients in a bowl (until it resembles sand). Press firmly into a lined loaf tin & refrigerate to set.
2. Blitz the soaked dates with 50ml of the reserved soaking water (skip if using Medjool), nut butter, and melted coconut oil until smooth. Add flaky sea salt to taste.
3. Spread caramel evenly over the base and return to the fridge for a couple of hours to set.
4. Melt the dark chocolate with coconut oil, pour over the set caramel, and chill for another 5–10 minutes.

This fresh and zingy honey mustard dressing is not only full of flavour but also packed with nutritional benefits.

SHAKE ME:
Juice of 1 lemon
1 tbsp apple cider vinegar
2 tbsp honey or maple syrup
2 tbsp dijon mustard
1/2 tsp minced garlic
1/4 tsp sea salt
Ground pepper to taste
1/4 cup olive oil

Shake all ingredients together in a jar and drizzle over your favourite salads or roasted veggies for a nutritious boost! 🌟
