Loving wife to Brent & fur baby mum to our dog, Alfie. In August 2018 we converted our first home. With a slight difference, it came with wheels. Our coaster was our first home, ready to be buckled up for daily adventures. We traveled our country, Australia, for 1 1/2 years & boy did we learn a few things along the way. Long & behold, Old Salty Trek was born. We wanted to share our tips, tricks, inspiration, travelling journal, life after the road & more. Including all of the bumps along the way. Also, delving into a wide range of refreshing wellness & lifestyle content. From minimalism, mumma nature, plant based recipes to ethical lifestyle movement, uplifting snippets of our faith & glimpses of poetry. A creamy, nourishing, gut lovin, festive treat doesn’t exis…Insert this cutie pie! 💛✨🤌🏽 recent recipe development shoot showcasing the powerhouse formula Gut Food by .blends
FILLING
2 cups pre cooked pumpkin ( skin removed )
1 cup coconut cream ( refrigerated until cold )
3 eggs
1 tablespoon honey ( double for a sweeter filling )
1 1/2 teaspoons cinnamon
1 teaspoon nutmeg
1 teaspoon ground ginger
1/4 teaspoon cloves ground
1/8 teaspoon pepper
1/8 teaspoon Celtic salt
METHOD
1 - Preheat the oven to 180C. Line a pie dish with baking sheet.
2 - Place all of the crust ingredients in a food processor. Blend until it comes together & forms a ball.
3 - Remove & place in the pie dish. Gently flatten with your hands until it covers the base & sides of the lined dish evenly.
4 - Prick several times with a fork. Bake for 15min.
5 - Meanwhile, scoop out the firm top layer of the coconut cream. Add this & all of the other filling ingredients to a blender or food processor. Blend until smooth & creamy.
6 - Remove pie from oven. Allow to cool slightly. Pour the filling into the base.
7 - Carefully return to the oven. Bake for a further 45min or until just set.
8 - Remove from the oven & cool completely, before refrigerating until firm.
9 - Serve with optional cinnamon &/or a little coconut yogurt. Enjoy!

Recent little captures of home turning it on. It’s been a hot minute since I’ve had a day capturing the big blue with swell. There’s something so satisfying about sitting back & freezing time. Capturing it do its thing, especially when it’s wild. You only get that one split second. Then it’s gone. Precious ~ as my father would say “always perfect ~ never the same.”
You never really quite know what’s over the next wave ~ much like life ~ how mesmerising.

Let. Them. Cook!! 🤌🏼 But seriously, how satisfying is popping together decent ingredients & smashing those cravings with a bit of homemade goodness?! 🫶🏼🤎 This little nourishing number is a go to fav. A super easy peasy twist on the beloved banana bread situation. This yumminess is GF, DF, RSF, packed with collagen & whipped up in as little as 30min! Check out the simple steps below if you’re keen for a new fav m**f situation.
BLACK FOREST & BANANA COLLAGEN MUFFINS 🤎🫐
• 3 medium overripe bananas mashed ( about 1 1/3 cup mashed banana )
• 1/4 cup honey ( or preferred natural sweetener)
• 2 eggs, at room temperature
• 1/3 cup cooled coconut oil ( or sub olive oil )
• 2 teaspoons vanilla essence
• 1 teaspoon apple cider vinegar
• 1 1/2 cups chickpea flour ( garbanzo bean flour )
• 1 teaspoon baking soda
• 1/2 teaspoon cinnamon
• 1/4 teaspoon Celtic salt
• 2 tablespoons collagen
• 1 1/2 tablespoons cacao powder
• 1 cup blueberries
• 1/2 cup quality dark chocolate chopped
STEP 1
Preheat oven to 175 C. Line each m**fin tin.
STEP 2
In a medium bowl, whisk together chickpea flour, baking soda, cinnamon, collagen, cacao & salt. Set aside.
STEP 3
In a large bowl, combine bananas, honey/natural sweetener, eggs, coconut oil/olive oil, vanilla essence & apple cider vinegar. Mix until well combined & creamy.
STEP 4
Add dry ingredients to wet ingredients & mix until just combined. Fold in almost all of the chopped chocolate & blueberries. Leaving a small amount for topping.
STEP 5
Spoon batter into prepared m**fin tins. Top batter with leftover chocolate & blueberries. Bake for about 20 minutes or until tester into centre comes out clean.
STEP 6
Remove from oven & place on wire rack to cool for 10-15 minutes. Demolish with pleasure my friend!
Keep well covered at room temperature for up to 3 days, then I recommend transferring to the fridge or freezer. Can be stored in freezer for up to 3 months.
These little guys are a tiny bit/very addictive & the old stale store-bought banana bread might not be welcome anymore. Just sayin. Let me know if you give this baby a whirl! 🤎
