🍫🍫 DOUBLE CHOC BANANA MUFFINS 🍌 🤤

1 x cup of Buckwheat Flour
1/2 x cup of Cacao Powder
1/4 x cup of Vegan Double Choc Protein
2 x tsp of Baking Powder
1/2 x tsp of Baking Soda
1/8 x tsp of Salt
3 x medium Ripe Bananas
1/3 x cup of Rice Malt Syrup
3/4 x cup of Almond Milk
3/4 x cup of Vegan Choc Chips

1. Preheat your Oven to 180 and grease your muffin tray. (I use a 12 muffin Size tray!)
2. Mash your bananas and add the rice malt syrup and milk. Mix well. (If you want to save a few slices of banana for the top of your muffins now is the time to do so.)
3. Add the remaining dry ingredients and mix until smooth.
4. Gently fold in Choc Chips and spoon the mixture into your tray.
5. Bake for 23minutes and allow to cool before removing from your tray!

Last week Pat and I enjoyed our first camper van trip up the coast and it was the BEST! 😄!!

Being able to pull up wherever we wanted and open the back doors, make lunch, walk, read, nap, swim and then move our home to a new beach was a whole new definition of freedom for me.

🚚🚚🚚🚚

This video does not even begin to convey how damn excited I was the day we picked up 'Betty'.

We hope to see her again realll soon.

The topic of my guided medi this morning was resolutions and intentions. Ive been thinking about it all day and I’m curious to know what you think about the idea. 🧘🏽

The narrator began by explaining that sometimes the ‘New Year, New Me' mentality and New Years Resolutions in general can have a slightly negative tone. It can elude to a feeling that something is wrong, broken or needs to be ‘resolved’.

I thought this was really interesting and honestly I’d never really thought about it like that. However in hind sight if I were to look back at past ‘resolutions’ there was a negative undertone. ‘Stop ***’, ‘No more ***’, ‘Don’t ***’ etc. 🛑🙅🚫

The narrator then spoke about intentions. Making a choice to move towards the person you want to be rather than away from the person you don’t. A choice to strive for more, to achieve new things or to challenge yourself in some way. She explained how this mindset comes from a more positive and optimistic place. ☀️🌼

Let’s take a sec, and really let that sink in.

EVERY moment is a NEW beginning.

I don’t know about you.. but a sense of both excitement and calm wave over me, knowing that realistically I can start over. I can make a conscious and powerful choice to hit the reset button and set new intentions at any given moment.

Cheers to making it through 2020 A-Team and to new beginnings all the time, all around us in 2021!!

Just in case you haven’t yet hit your chocolate threshold this week.. Introducing my Super Duper Fudgy Brownie 🤤

She really is super, she's incredibly duper and oh so fudgy. You will not be disappointed.. unless you're one of those sick people who prefer solid brownies.. 🙅🏼‍♀️

2 Tbs Chia Seeds
1/2 Cup water
1 Cup Nut Butter
3/4 Cup almond milk
1 tsp vanilla
1 Cup brown sugar
1/2 Cup almond meal
1/2 Cup cocoa powder
1/4 tsp Salt

1. Mix together the chia and your water and leave aside for 10mins so the chia can soak up all the water and become a little 'glugy'.
2. Mix together all of your dry ingredients in a bowl.
3. Oh if you haven't preheated your oven (180degrees) and lined/greased your tin by now you should probably get onto that! Oops..
4. Add all of the wet ingredients and your chia glug into the bowl with your dry ingredients and mix until you can't mix no more.
5. Add your mix into the lined/greased tin and place into the oven.
6. Bake for 25-30mins (or a little longer if you prefer)
7. Take the brownie out and allow to cool 10-15mins before slicing.

You can drizzle your brownie with whatever you please. I choose to mix some cocoa and maple syrup to make my own chocolate sauce but equally peanut butter could've done the trick!

✨✨ Every New Year Pat and I sit down and write out our goals for the year. This week we wrote out our 2021 goals and I felt a clarity I have not yet felt when setting goals in the past.

This year I got crystal clear on what it is that I want to achieve. I’m talking ALL the details. The feeling of sitting in my leather upholstered drivers seat of my dream car, my hands on the steering wheel and the first song I would pump through the speakers. (Justin Bieber, obviously)

Once I’d ironed out the exact details of all that I want to achieve I told myself if I REALLY want these things, I need to WHOLE heartedly commit. Commit like I would if Channing Tatum were to ask for my hand in marriage. 

And let’s be honest.. I’m not an overly social person in general and then COVID adds an extra layer to my introverted social awkwardness, but I still needed to understand that in committing to these goals I will have to make some sacrifices, changes and compromises. I will have to say no so things and people that I love to spend time/money working towards my goals.

And by truly committing this means that I will make time every single day to take inspired action. I am going to do things every day that help me to move closer to those goals and I’m going to have a fantastic time while I’m doing it!
