Do you enjoy eating oysters?

Did you know that oysters are a great source of zinc? This mineral is crucial for immune function, skin health, wound healing and reproductive health!

I shared this dozen with my husband over the weekend. At $3 per oyster (happy hour) it was hard to pass up. I told him we were getting a much needed zinc boost & rattled on about all the health benefits πŸ˜† .

It's been a while since I shared a breakfast!
I already knew last night what I was having for breakfast today when I made vegetarian Chili from Cookie and Kate (please google it & make it...it's a great recipe)!

I scrambled 2 eggs (next time I might do 3 😁) heated the Chili in a separate pot and served with a dollop of yoghurt, coriander and avocado πŸ₯‘! Absolutely delish!

And ready in less than 10 minutes!!! Amazing πŸ‘ πŸ™€ 😯

I feel like my mum would approve of my rosΓ³Ε‚ (polish chicken soup) this time round! The depth of flavour was there and it was so gelatinous (once cooled). So nourishing and comforting.
It's funny how something so simple can be so healing πŸ’• πŸ’– and so good for the soul ❀️.

Another borlotti bean and veggie soup β€οΈπŸ˜‹.
Cooked last night and warmed up for lunch today.

Veggies include: onion, celery, carrot, garlic, potato and cauliflower. I didn't have any stock so used water and 1 x 400g tin crushed tomatoes.

I also added some spelt sourdough pasta shells.

Served with grated parmesan, pepper and parsley. Delish πŸ˜‹.
