What’s a good weekend night without some Nachos with beans! After being diagnosed with celiac, I initially found it was easy to eat Mexican food (100%masa harina tortilla/chips) outside as a part of social outings. Did not have to compromise on taste or get into those awkward situations explaining the restaurant servers your diet restriction. So when in doubt, go Tex-Mex 😌

Pumpkin Turmeric soup:

Ingredients:
1/2 Kent Pumpkin peeled, chopped
1/2 brown onion roughly chopped
1 tbsp extra virgin olive oil
1/4th cup of diced tomatoes from can
250ml Veggie/chicken stock
1 tbsp turmeric powder
2 tbsp garlic minced
1 tbsp ginger minced
1 tbsp tomato basil paste
Sour cream to drizzle

Method:
Heat the olive oil in a pan and sauté onions, garlic and ginger. Once the onions and garlic have slightly turned golden, add turmeric.
Then add the tomato paste and cook for 30 secs.
To this add the chopped pumpkin and diced tomatoes and the stock.
Let it simmer on medium flame with the lid on the pan for 10 minutes or until the pumpkin is cooked. (Put a fork through one of the pieces to check if the pumpkin is cooked)
Turn the heat off and let it cool for another 10 minutes.
Using a stick blender or food processor, puree the soup mixture until smooth.
Put the smooth soup back into the pan on slow flame for another 2 minutes, season it with salt, pepper and herbs of your choice.
Laddle the soup into bowls and drizzle some sour cream.

Enjoy the warm healthy soup with garlic rubbed sourdough or some breadsticks.
