Simple Whole Chicken Vegetable Soup 🍲
Ingredients:
1 whole chicken trimmed
2 carrots, chopped
2 celery stalks, chopped
1 onion, chopped
3 garlic cloves, smashed
Salt and pepper to taste
500 ml bone broth
500ml chicken stock
(zucchini, corn, broccoli or any other veggies you like)
Instructions:
1. Add chopped onion, garlic, carrots, celery, salt, and pepper. Fry off . Place chicken in a large pot. Pour in liquid and add extra water off needed to just cover the chicken.
2. Bring to a boil. Reduce heat and simmer, covered, for about 1.5 to 2 hours, until chicken is cooked and tender.
3. Remove chicken.
Let it cool slightly, then shred the meat. Discard the skin and bones or return bones to the pot for stronger broth (optional).
4. Add extra veggies (if using).
Add any additional vegetables and the shredded chicken back to the pot. Simmer for another 15 minutes until veggies are tender.
5. Taste and season.
Add more salt or pepper if needed. Serve warm
