Family Mexican Beef Bowls 🌮✨
(naked family Mexican style mince moment)
Serves 4
This is one of those throw it in the pan, fill the house with smell, everyone suddenly appears in the kitchen kind of meals… you know the vibe 🤍
🥩 750 g beef mince
🧅 1 large red onion, diced
🧄 3 cloves garlic, crushed
🫒 2 tbsp olive oil
🌶️ 2 ½ tsp smoked paprika
🌿 2 tsp ground cumin
🌱 1 ½ tsp ground coriander
🌾 1 tsp dried oregano
🍅 2 tbsp tomato paste
🥫 400 g tin crushed tomatoes
🫘 400 g tin black beans, drained and rinsed
💧 ½ to 1 cup water (just to loosen if needed)
🧂 salt + pepper to taste
🍋 juice of 1 lime
To serve, build it however your people love it 🤍
🥬 shredded lettuce
🍅 fresh chopped tomatoes
🥑 creamy avocado slices
🍚 cooked rice or roasted potato if that’s your thing
Method
Heat olive oil in a large pan and let the onion soften until it starts smelling sweet and a little golden. Add garlic and stir through until your kitchen smells like you’ve got your life together 🌿
Add the beef mince and cook until browned and broken up beautifully.
Sprinkle in paprika, cumin, coriander and oregano. Stir it through like you mean it so all those spices wake up and coat everything.
Stir in tomato paste, crushed tomatoes and black beans. Add a splash of water if it needs loosening. Let it simmer gently until everything thickens and gets rich and saucy.
Finish with lime juice, salt and pepper. Taste and tweak until it feels just right.
Serve it up family style and let everyone build their own bowl… a little messy, a lot delicious, zero pressure energy 💫
