Festive Gut-Loving Chicken Salad

This colourful salad is the perfect mix of fresh, light, and satisfying, with a balance of protein, fibre, and healthy fats to keep your blood sugar (and energy) steady through long lunches.

Ingredients:
* 2 cups cooked shredded chicken (great use for leftovers!)
* ½ cup pomegranate seeds
* 1 small mango, diced
* ½ cup cucumber, diced
* 1 small avocado, cubed
* Âź cup chopped parsley
* 1 tbsp olive oil
* Juice of 1 lime or lemon
* Salt + pepper to taste
* Optional: walnuts

Method:
Combine all ingredients in a large bowl and toss gently. Drizzle with olive oil and lime juice, season, and enjoy fresh.

Optional: top with crushed pistachios or roasted almonds for crunch and hormone-loving fats.

Want to balance your blood sugar and manage your weight more effectively?

Here are 5 things you can implement TODAY:
1️⃣ Prioritise protein at every meal: Buffers sugar spikes, less insulin released, keeps you fuller longer.

2️⃣ Don’t fear fat: Slows carb absorption, prevents spikes and crashes, essential for hormone balance.

3️⃣ Choose quality carbs: Sweet potato, oats, vegetables over refined stuff. The fibre slows digestion and prevents blood sugar spikes.

4️⃣ Move your body: a short walk after meals lowers blood sugar and improves insulin sensitivity. (I’ll save my resistance training rant for another day 😂)

5️⃣ Hydrate properly: Dehydration raises blood sugar and increases insulin resistance. Aim for 0.35mls per kilo of body weight.
