Fly in day tomorrow 🥳
Because it's NYE & hubby missed out on our yummy Christmas food, we are having a couple of friends & our kids are coming to celebrate with us again 🥳

I made Vol-au-vents last night & the filling is in the fridge. So will make & bake just before we are ready to eat. They only cook for 5 minutes 😋
I've also made chicken & leek pies that have gone into the freezer.
Also on the menu is Melted Brie with basil pesto, Mexican stack, French Vanilla Canel`e & Trifle.
I'll post pics tomorrow

I hope everyone had a lovely Christmas with those nearest & dearest to them. We had a quiet one, with my mum, dad, son Chris & my FDIL Sarah, which was lovely, just being together with lots of laughs & chatting. 💖

The pics below are from our Chrissy feast, which I'm still trying to get through, even though everyone took some home with them.

2 of the elves were made by my 89yr old mum just before Xmas & people have them all over the world. They are very much treasured heirlooms.🤩

I for one CANNOT imagine it & whilst cooking & getting prepared for Christmas & making the hampers, etc etc I remember on numerous occasions thinking how grateful & lucky I am, that came into my life. For SOOO many reasons

Today while I was busy cooking & starting to prepare for Xmas, I was thinking how grateful I am for SOOO many things.

🖤💚 Having a Thermomix (or 2/3) is a given to be grateful for...but I was thinking more about 👇

✨ Having lovely friends, which includes Customers who have become friends. Today one of those amazing people got me some 🍒 & a bale of pea straw from Boyanup markets & her lovely hubby delivered them to me. So Very grateful to them

✨I am grateful EVERYDAY that I have a roof over my head. Bruce & I say it all the time how lucky we are to have the house we have. It could do with painting & maybe a new kitchen etc but we love our home 🏡

✨I'm also VERY grateful to have a caring husband who has my best interests at heart & vice versa. Plus he loves my mum & dad & helps & supports me as much as he can. ❤️

✨I'm super grateful to still have my Mum & Dad & that I'm able to help them as much as I can.

✨ I'm also REALLY grateful to be an Australian & although our country is in a lot of turmoil ATM, I am hopeful that what happened last Sunday NEVER happens again. 😭🙏 Such a sad sad event that should never have happened.

Do you ever have those days when whatever you do turns to 💩😁 🤔❓

The Nougat that I make most Christmases had a mind of its own & the almonds had a bit of a hissy fit but the chocolate crackles behaved😆 It's been years since I made them.

I had to get to the Eaton Foreshore Twilight markets with Kia Gorham - Thermomix Team Leader & Consultant yesterday, so today was fix up day 🥴

Rather than waste ingredients from my failed nougat, that I did try to resurrect 🫣 I made them into scrolls. 😋

The almonds are safely in jars for my hampers.

Stewed apricots are in the freezer to make some danishes or to have with yoghurt or Killer Vanilla icecream sometime.

I have also made the mixture for some Orange & Vanilla Canel`e for my dad, which needs to stay in the fridge for a few days. I'll probably cook them Xmas morning!

How is it nearly Xmas Day🎅

The other thing I had to "fix up" was the last lot of caramelized red onion chutney that I made. I was a bit heavy handed with the chilli🌶️ 🥵 so today, I doubled the recipe, didn't add more 🌶️ & added the 2 previous jars after the onions has browned.
Taste buds have been saved 😂

All I can say thank goodness I have 2 TM7s 🫣 & I can't imagine not having a Thermomix in my kitchen‼️

Who else starts cooking at 10 o'clock at night 🥱 😴
Just me❓🤔

First time making Christmas Crack & I was a little bit heavy handed with the chocky but it still tastes good!

The caramel is oh so easy & so are the ♥️ & 💚 shortbread. I'd run out white chocolate but had some in a piping bag in the fridge. Hence why they are squiggled & not dipped 😁

💞About to pop into a gift bags for some friends. 💞

Creamy Beef Curry was a Recipe Community recipe BUT is now on Cookidoo & is always a favourite in our house. (Especially when you get a bargain packet of meat 🤑 $4.87)
I usually use chuck steak but tonight it was Shin beef🤑

After I had diced the steak, I rubbed a spoonful of Carb soda through it (velveting), left it for ONLY 5 minutes & washed the carb soda off & I tell you what....the meat was so tender/melt in your mouth. 🤩
While that was cooking away, the other TM7 was cooking mashed potato, which went into a Thermoserver & then it steamed carrots from the garden, plus some peas.

Talking of Thermoservers, I have every size that you can think of & I love them, for meal times like tonight.
Bruce had a late dentist appointment, (I went earlier in the day) so I was able to get dinner cooked & keep it warm until he got home.
Plus I was able to get cleaned up so I can sit down & feel sorry for myself.
(Root canals are never much fun 🥹)

The new model Thermoserver is AMAZING 🤩 & keeps your food hot for so long.
