Looking for something delicious and decadent that’s not going to ruin your health goals this season? Let me introduce my recipe for these easy, super-quick, very cute and surprisingly popular Christmas canapés 🎅🏽
Let me know if you make them - they’re sooooo yummy 🤤 you won’t know they’re healthy!!

Heat frypan to medium heat first.

Pikelets:
scoops peppermint mocha protein
1 tbsp almond meal
1 egg
1/2 - 3/4 cup chilled water

1. Mix all ingredients to a thick batter consistency (watch video demonstration if needed).
2. Drop teaspoon-ful of mixture into pan. Cook until bubbles appear - couple of mins each side. Allow to cool.

Topping:
1/2 cup to 1 cup coyo (any brand)
2tsp peppermint mocha protein

Mix and gently spoon a little dollop onto each pikelet. Top with a fresh raspberry and some festive dusting sugar, crushed candy canes or teeny metallic cachous.

Makes 12.
