Bush Dietitian The Bush Dietitian is an accredited practising dietitian(APD). I accept Medicare and NDIS referrals.

I’m Catherine, the Bush Dietitian, an Accredited Practicing Dietitian (APD) with a love for food and all things food related. During my studies I developed an interest in eating disorders (ED), allergies/intolerances and paediatrics, so have started training in these areas since graduating at the end of last year and have always had a passion for the Australian bush. I practice from a Health at Every Size (HAES)/weight neutral approach to help you focus on your overall health not just the numbers on the scales. I provide individualised nutritional advice in a weight-inclusive, body positive manner, rather than following restrictive or avoidant behaviours. I currently offer home visits around Brisbane and Sunshine Coast areas or telehealth wherever you are in the country. Outside of dietetics I love cooking especially trying new recipes and experimenting with altering them, arts and crafts, ballet and scouting.

Minute Monday: MEF

This time I have a really simple baked potato option. You can used an oven or even air-fryer to bake your potatoes, but for me the microwave is much quicker. The potatoes cooked while I heated the rest.

Most of the time I use leftover mince when doing these however recently we didn't have any mince, but did have a tin of bolognaise sauce in the cupboard and that worked almost as well. Yes, this option is higher in salt than when I cook my own bolognaise, however for most people this is not an issue, especially if overall intakes are low, and the overall nutrition profile of the product is not too bad.

As with a lot of these meals this is a 2 person recipe, but you may have a bit of mince leftover, depending on the size tin you are able to get. We just used that for a lunch the next day, but do what works for you.

This time I have a simple chunky guacamole that's great as a dip or on top of your favorite Mexican style dish.

You can serve it straight away after making, but if you let it sit in the fridge for a few hours the flavours improve.

Fun fact Friday:
I LOVE fresh fruit, always have (so much so when I was young my mum often called me a little fruit bat because I wanted it all the time), but being able to get fresh fruit has been very hit and miss for us lately so we have heavily relied on tinned and frozen fruit instead.

So yesterday's dilemma....What to do when you finally have access to cheap fresh fruit then plans have changed and you are going to be away? I know it won't last til we get back and obviously don't want to waste it. Answer: Stand in the kitchen chopping it all up while watching the scouts info session on the tv (connected to my laptop) and make a massive fruit salad to take with us of course! (And also "make" hubby make custard and have some for dessert too!) Problem solved!
