Happy International Coffee Day ☕️☕️☕️
I’m a little late to the party but how can we not celebrate everyone who plays a part in bringing this liquid gold to our lips every day (and without which I couldn’t live...well I wouldn’t want to live!) especially to the coffee growers, pickers, roasters and producers who commit to hard, labour intensive, back breaking work to quench our insatiable thirst for the good stuff.

In honour of today I had to bake something celebrating coffee, so here it is; Coffee Tres Leches Cake...better late that never! This is a coffee infused twist on the traditional tres leche (three milk) cake, a traditional Latin American dessert (and one I haven’t had in sooooo long)! This light and airy sponge cake was soaked with a combination of three different milks (fresh milk, condensed milk, evaporated milk) and coffee of course! Topped with dalgona coffee cream and dusted with cocoa. Mmm she’s moist 😉

What could possibly be better than a Banoffee Pie; that buttery biscuit base, decadent deeply caramelised dulce de leche, fresh banana, double thick vanilla bean cream? The addition of Biscoff/Lotus of course! 🚨🚨🚨 ***Calling all Biscoff Lovers***🚨🚨🚨

So I had to do a little testing with some Biscoff Banoffee Pielets! (Not sure that’s a word but I figure if you can have tartlets, surely you can have pielets? 🤷🏻‍♀️)

These lil bad boys are made up of:
♥ Biscoff/Lotus biscuit base
♥ Dulce le leche (toffee)
♥ Biscoff caramelised biscuit spread
♥ Fresh banana
♥ Double thick vanilla bean creme
♥ Biscoff/Lotus biscuit crumbs

In case you’re wondering, the feedback was...and I quote:

“This was definitely an elevated version of your banoffee & now one of my favourite pies that youve made! As always, perfect lightness of the cream and sweetness of the banana and caramel. You literally outdid yourself because this tasted even better than your [original] banoffee!”

“we just had the banoffee-biscoff! It was soooo good! Perfect proportions between cream, banana and dulce de leche. And the banana comes through perfectly. The dulce de leche is even better, if thats even possible haha.”

What do you think? Should pielets should be added to the menu? Or do you prefer a large-ass pie so you can go back for seconds and thirds? 🤫...I won’t tell anyone. No judgement here. 😉
