MINI VEGAN PAVLOVAS:

These mini vegan pavlovas taste exactly like the traditional version - sweet, light and crispy, with a soft marshmallow centre.
Topped with whipped chocolate coconut cream for a lighter healthier cream alternative. 
Who said vegans can't enjoy some good old pav also!

PAVLOVA INGREDIENTS: 
400g can of organic chickpeas
1/2 tsp cream of tartar (or substitute for 1/2 tsp of white vinegar)
1 1/4 cups (200g) pure icing sugar

CREAM INGREDIENTS: 
2x 400g cans of coconut cream, placed in the fridge overnight
2 Tbsp raw cacao powder
2 Tbsp maple syrup (or rice malt syrup)
fresh strawberries to serve
icing sugar for dusting 

METHOD:
Drain the chickpeas, reserve the liquid and place the liquid in a medium sized mixing bowl and refrigerate for at least 2 hours.
Preheat the oven to 150 degrees C.
Line 2 large baking trays with parchment paper.
Remove the chickpea liquid from the fridge and beat with an electric be**er on high speed.
The mixture will triple in size and soft white peaks will form after 10-20 minutes.
Add the cream of tartar to the liquid and continue to beat until well combined.
This will help to thicken the meringue.
Gradually add the icing sugar, one spoonful at a time, beating for 10-15 min or until the mixture is thick and well blended.
Place large spoonfuls of the meringue mixture onto the baking trays, leaving about 2cm between each one as they will expand in the oven.
Reduce the oven temperature to 100 degrees C and bake for 1 hour.
When cooked, turn the oven off, open the oven door halfway to allow the meringues to cool and harden in the oven at least 4 hours.

To make the cream, add the thickened coconut cream parts from the can to a medium sized mixing bowl, discarding the clear liquid.
Beat the coconut cream with the electric be**er on high for 5 minutes.
Add in the cacao powder and maple syrup and continue to beat for another 5-7 minutes until well blended and fluffy.
Dollop spoonfuls of the coconut cream onto the pavlova meringues straight away or cool the cream in the fridge and add to the pavs before serving.
Serve with fresh strawberries and a dusting of icing sugar. Delicious! 😋

AVOCADO, MANGO & CORN SALAD: 🥑🥭🌽

INGREDIENTS:
1 cob fresh sweetcorn
1 large avocado, halved, pitted & cubed
1 mango, peeled, pitted & cubed
175 g cherry tomatoes, halved
1 lime
1/2 red onion, finely chopped
1 small red pepper, halved, deseeded and finely chopped
1 bunch kale, shredded and chopped
1 bunch coriander, chopped
1 bunch mint, chopped
Extra virgin olive oil
raw honey
salt & pepper

METHOD:
Lightly boil or char grill the corn (or leave raw) then when cool, cut the corn from the cob.
Grate the rind of the lime, then juice it.
Place about 2 Tbsp olive oil in a jar with the lime juice and rind, salt and pepper, and 1tsp honey, and shake well to mix.
Place all salad ingredients into a bowl, drizzle over the dressing, and toss well.
Spoon into bowls and serve immediately....delicious! 😋

RASPBERRY & WHITE CHOC BRULEES: 😋

INGREDIENTS:
200g white chocolate, broken into pieces
200ml single cream
500g Greek yoghurt
250g fresh raspberries
75g coconut sugar
3 Tbsp water

 METHOD:
Place the chocolate and cream in a heatproof bowl.
Set the bowl over a saucepan of simmering water and heat, stirring occasionally until melted and smooth.
Remove from the heat and cool slightly.
Stir the chocolate mixture into the yoghurt, then fold in the raspberries.
Divide between 6 ramekins and level the surfaces with the back of a teaspoon.
Chill in the fridge for at least 30 mins.
Place the sugar and water in a small heavy-based pan.
Heat gently until the sugar dissolves, then turn up the heat and boil rapidly for about 4 mins without stirring until the sugar turns a rich caramel colour.
Remove from the heat and let the bubbles subside, then quickly spoon some caramel over the top of each ramekin,
The topping will set almost instantly.
Serve immediately or chill and serve within 3 hours whilst the caramel is still crisp.
You can substitute the raspberries with strawberries or blueberries if you prefer
