These teriyaki chicken wings are so dang delicious I feel like I have to post about them every time I make them! 😂

If you grew up in my neighbourhood, you’d know just how awesome my Dad’s Teriyaki Chicken Wings are. They have been a neighbourhood favourite on Easter Sunday and Super Bowl Sunday for decades! Lucky for me, they taste just as good here in Australia! Thanks for the recipe Dad!

Ingredients:

1/2 C Soy Sauce
Zest of 1 orange
2 Tbsp grated ginger
3 garlic cloves- crushed
3 Tbsp honey
1 kg or 2.2 lbs of chicken wings

Use a microplane if you’ve got one for the orange zest and ginger.

✅ Mix all marinade ingredients together in a large bowl until honey dissolves.

✅ Add chicken wings (I cut them in half to make chicken flats and drumettes) and marinate for 1 hr.

✅ Place chicken and marinate into a deep pan and pop into a preheated oven 175C/350F. Bake for 10-15 mins on one side, turn, bake 10-15 on the other side. Carefully drain the excess liquid from the pan into a saucepan and pop onto the stove top to reduce gently.

In the meantime bake the chicken wings for another 15 mins until they have a bit of caramelisation on them.

Strain the teriyaki reduction and drizzle over the wings once you remove them from the oven.

Pop them into a bow and sprinkle with a few sesame seeds before serving. 😉

They are SO good! I dare you to have leftovers 😂

What a winner!

I love this Thai red chicken curry every time I make it! It’s always slightly different as I use the veggies I have on hand instead of buying what the recipe calls for.

This round I used carrots, zucchini, red & green capsicum and it was simply delicious!

It also calls for Thai basil which I happily have cropping up in my garden atm. It’s so fresh and flavourful!

I always cut the sugar content in half which suits my palate.

Last night I used maesri curry paste recommended by a friend. It was perfect for me but too HOT for the hubby! Sorry hubby! 😬 🌶️ 🥵

Chicken and spinach lasagne from cookidoo is pretty tasty! We’ve had an abundance of pumpkin to use as of late, so I thinly sliced some and steamed it, prior to layering it between the sheets of pasta, chicken, spinach and béchamel! It was a delicious addition. 😋

Corned beef hash. This is one of my favourite ways to use leftover corned beef.

Pan fried potato, diced onion, garlic, yellow capsicum, fresh corn from the cob and corned beef, served on a bed of mixed greens (not traditional but tasty) and topped with a poached egg with spicy aioli with a hint of 🌶️ in adobo sauce. Oh yes, and a sprinkling of thinly sliced spring onion for garnish. So yum!
