Soba noodle salad is something we can enjoy variety of veggies in one bowl 🥣

Soba = Buckwheat is a great source of gluten free option and rich source of unsaturated fatty acids (74.5%–79.3%), which have health benefits against heart diseases, cancer, inflammation, and diabetes (Ruan et al., 2020).

Mix with a variety of veggies and drizzle below.
- soy sauce
- fish sauce (only a little)
- ginger paste
- sesame sauce

**Just be careful when you are choosing the noodles. Look for soba that are made of Buckwheat 100% as majority of soba noodle packet only contains 10-20% of Buckwheat 🥶

2 ingredient weekend treat 🍎🥧

-puff pastry
- red apples

1️⃣Stew some organic red apples in a little cinnamon, nutmeg, ground ginger & vanilla extract.

2️⃣Add them to pastry & form little parcels

3️⃣Bake for 30 minutes until golden brown

4️⃣Serve with coyo & a drizzle of honey + extra cinnamon & chia seeds to garnish

This is a little personal, but I recently found out my dad’s blood sugar level is quite shocking! It’s been just over a week since I started his treatment and I have managed to bring his fasting glucose level from 14 to 7.

Type 2 diabetes is one of condition we absolutely CAN fix. And it’s not just about what we eat which means we don’t need to go on a crazy restricted diet.

What’s more important is to support our essential organ’s function.

Liver and gallbladder - We must make sure they are functioning in good condition to work with pancreas. Alcohol, smoking, medication and all other toxins can reduce their function. Sometimes we need to ‘reset’ these organs. How? Depending on “What Caused”. With my dad’s situation, he is a heavy smoker so I used natural compound ‘clinoptilolite’ to cleanse his organ.

Hydration - I found out dad doesn’t drink enough water. Glucose is excreted via urine so I did make sure he is drinking adequate water.

For someone who suspect magnesium deficiency - interestingly, magnesium is the one that binds to glucose for us for healthy metabolism. So watch out if you are stressed, having twitching eyes or muscle cramps. IMPORTANT - check in your digestive system before you start topping up magnesium. Constipation, bloating, gas, IBS, SIBO, you want to focus on these first otherwise your intestine won’t be able to absorb!

Progesterone also regulates our mood and metabolism.

A lack of progesterone can result in mood changes (feeling down or anxious), experience sleep difficulties, weight gain and even bloating.

One of the important ingredients for progesterone is folate, mainly coming from green vegetables and avocados. So lacking green veggies can result in progesterone deficiency. But at the same time we want to remember there is some gene conditions called MTFHR which has difficulty converting folate to Active form.

Winter is here, and it’s the perfect time to ensure your vitamin D levels are optimal.

Common Symptoms of Vitamin D Deficiency:

Women’s Health
Vitamin D helps oestrogen production. Lack of estrogen can lead to menopause like symptoms such as hot flashes and mood swing. Research shows providing adequate vitamin D has improved psychological PMS symptoms: Irritability by 46%, Anxiety by 60%, Sadness by 39% and Crying by 26%.

Cholesterol
‘Low vitamin D levels could result in dyslipidemia, and lipid abnormalities—that is, an increase in triglyceride (TG), total cholesterol (TC), and low-density lipoprotein cholesterol (LDL-C) levels’ - Mi Ra Kim

Common mistake I often see = Just taking the dosage that the bottle says
Don’t forget what your supplement bottle (especially the one from the retail shop and pharmacy) says is ‘Maintenance dosage’ and not therapeutic dosage. Depending on your vitamin D levels, I often advise to take 5000 to 10,000 IU (based on their vitamin D level and condition that they are trying to improve). Whereas retail products often suggest 1,000 IU only, which is not enough to recover the deficiency. If you want to feel better, it’s important to know your current level as a first step!

Nutrition tip - “How to cook matters”

Hello wonderful people. 
We all know what we eat is important, but did you know ‘How you Cook’ is also important? Because some nutrients, especially vitamins are very sensitive to heat, which means B vitamins will lose their ability if you are heating them up. 

Vitamin C
Works for our healthy skin and strong connective tissues. It also support immune system as well. Fatigue, red gums, easy bruising and bleeding, joint pain and rough, bumpy skin can be the signs of vitamin C deficiency.

Folate (B9) 
Important in red blood cell formation and for healthy cell growth and function. Lacking folate can end up ‘Vitamin deficiency anaemia’ which may make you feel fatigued, headache and even palpitation for some people. 

Vitamin B6
Super important for our healthy nervous system. Deficiency can increase sensitivity to stress (AKA. Adrenal fatigue), anxiety and depression. Vitamin B6 also support healthy hormone function too. 

It’s great to have warm meals especially during winter season, but keep in mind we still want to eat some fresh fruits and veggies without cooking so we are not lacking essential nutrients that are heat sensitive. Alternatively, try blanching veggies such as broccoli and asparagus instead of boiling :)

This week I’d like to touch on a very important health topic which I am identifying and recognising as a growing concern within the wider health community and among many of my patients. I’m referring to this topic as ‘Toxicity of heavy metal accumulation’.

You may now be wondering, what is this exactly?

Well, to provide you some fundamental educational insight, let’s begin with what heavy metals are specifically.

Heavy metals are characterised by being metals that have a high density or atomic weight. To break it down further, they include metals more commonly known as lead, mercury, cadmium, arsenic, copper, and chromium.

Whilst some of these are essential trace elements for animals and humans in small amounts only, the accumulation of these metals within the body is what can lead to many health related issues and imbalances, resulting in very unpleasant symptoms 😞

Next, you may be thinking…but how could I have heavy metals inside my body?...ahhh this is where it gets interesting..

Heavy metals can actually accumulate in the body simply by you being exposed to them over lengthy periods of time or even through consumption. Sadly, it is particularly hard to avoid in today’s world where we are constantly exposed to high volumes of heavy metals through things like household cleaning products and chemicals, certain types of office and household furniture and upholstery, beauty, skin, hair care products and especially environmental pollutants such as pesticides on our food and mould in our home, air conditioners or work environments.

Overtime, as you can imagine this exposure and ingestion accumulates within our bodies, resulting in an ‘accumulation of heavy metals’. This accumulation is then what leads to the ‘toxicity’ and here is where health havoc develops.

A study showed that Increased vitamin D levels were associated with increased beneficial bacteria and decreased pathogenic bacteria. A therapeutic dose of Vitamin D was administered to participants and results were also associated with decreased inflammatory bowel disease activity after the treatment.⠀⠀⠀⠀⠀⠀⠀⠀⠀

Do you ever feel tired after a meal? It may be due to insulin resistance.

So, what is insulin resistance exactly? It’s essentially when when cells in your muscles, fat, and liver don’t respond well to insulin and struggle to take up the glucose from inside your blood, so as a result the pancreas makes more insulin to help the glucose enter your cell, however this excess insulin production leads to higher levels of it in the blood. So, overtime the cells become resistant to the insulin.

Here’s the thing though, insulin resistance cannot be picked up in a blood test, so one way of trialing whether you may see signs of insulin resistance is after eating a meal, particularly carbs. Try reducing your intake of carbs & see whether you notice a difference.
-
Insulin resistance doesn’t only cause fatigue but it can effect your moods also. Again, the best way to detect things sometimes is to tune in & try to listen to what your body is telling you. It will always show you signs but it’s up to you to connect & listen.
-
One final thing to be mindful of is that hidden sugars can be found in many pre packed meals and sauces/ condiments.
