✨️HIGH PROTEIN BROCCOLI & QUINOA FRITTERS✨️
I saw this recipe from .vegetarian and thought I must give it a go! I also gave some to my 8month old baby who loved it!
This is so easy to make and very filling.
✨️THE BENEFITS✨️
QUINOA: high in protein and is a complete source of protein, meaning it contains all 9 essential amino acids.
BROCCOLI: high in fibre and contains sulforaphane, which is known to protect against cell damage, reduce inflammation and build and repair DNA.
CANNELINI BEANS: high in protein, fibre, iron and copper
CHICKPEA FLOUR: gluten free and high in protein. 1 cup of chickpea flour contains 20grams of protein.
✨️THE RECIPE✨️
1 small head of broccoli, finely chopped
1 cup cooked quinoa
1/2 cup cooked or canned black beans (I used cannelini beans)
1½ teaspoon smoked paprika
1½ teaspoon dried oregano
1½ teaspoon dried rosemary
Salt and pepper, to taste
1 cup chickpea flour
1/2-3/4 cup water
✨️THE METHOD✨️
I literally put every ingredient into a bowl, used a stick blender to blend it all together, then placed a spoon full into a hot pan to make the fritters. Cooked on both sides until browned. OR you can follow .vegetarian method.
