Easy pasta primavera
Ingredients
6 slices prosciutto
500g casarecce pasta (substitute fusilli)
1/4 cup (60ml) extra virgin olive oil, plus extra, to drizzle
2 eschalots, thinly sliced
2 garlic cloves, sliced
Pinch chilli flakes
300g sugar snap peas, trimmed, halved
2 large handfuls baby spinach
1 cup fresh or frozen peas
6 zucchini flowers, sliced lengthways in half
Finely grated zest and juice of 1 lemon
Handful flat-leaf parsley, finely chopped
2 large handfuls basil leaves and finely grated parmesan, to serve
How to cook
1.Preheat oven to 200°C/180°C fan-forced. Line a baking tray with baking paper.
2.Lay prosciutto in a single layer on prepared tray. Bake for 10-12 minutes, until crisp. Set aside.
3.Meanwhile, bring a large saucepan of water to the boil and season generously with salt. Add pasta and cook for about 8 minutes, or according to packet instructions, until al dente, reserving 1/3 cup (80ml) pasta water.
4.Meanwhile, heat oil in a large, deep frypan over medium-high heat. Cook eschalot, garlic and chilli flakes with a pinch of salt flakes for 2-3 minutes, stirring occasionally, until beginning to soften. Add sugar snap peas and cook for 2 minutes, tossing often to cook evenly.
5.Drain pasta and add to pan along with reserved cooking water, baby spinach, peas, zucchini flowers and lemon zest and juice. Toss until well combined and season to taste. Toss through the parsley.
6.Drizzle with extra oil and serve scattered with crispy prosciutto, basil and parmesan.

Creamy Tortellini Vegetable Soup Is “Comforting and Cozy”

This creamy tortellini vegetable soup is the perfect weeknight dinner for chilly nights. This veggie-packed meal is easy to prepare, ideal for those busy nights when you want a delicious, homemade dinner without spending hours in the kitchen. Just pair it with some crusty bread and a side salad, and you’ve got a warm, comforting dinner the whole family will love!
Ingredients
2 tablespoons extra-virgin olive oil

1 large carrot, peeled and chopped (1 cup)

1 small yellow onion, chopped (1 cup)

1 tablespoon finely chopped garlic (from 3 cloves)

3 cups reduced-sodium vegetable broth or no-chicken broth

1 (15-ounce) can no-salt-added diced tomatoes with basil, garlic and oregano, undrained

2 tablespoons chopped fresh basil, plus more for garnish

½ teaspoon ground pepper

¼ teaspoon plus ⅛ teaspoon salt

1 (9-ounce) package refrigerated cheese tortellini

1 (5-ounce) package baby spinach

1 cup heavy cream

Step 1.
Heat 2 tablespoons oil in a large Dutch oven over medium-high heat. Add chopped carrot and chopped onion; cook, stirring occasionally, until the onion is softened, about 5 minutes. Add 1 tablespoon garlic; cook, stirring constantly, until fragrant, about 1 minute.
Step 2.
Stir in 3 cups broth, 1 (15-ounce) can tomatoes, 2 tablespoons basil, ½ teaspoon pepper and ¼ teaspoon plus ⅛ teaspoon salt; bring to a boil over medium-high heat, stirring occasionally. Reduce heat to medium; cover and simmer, undisturbed, until the carrots are crisp-tender, about 5 minutes.
Step 3.
Uncover and stir in 1 (9-ounce) package tortellini; cook, stirring occasionally, until the pasta is tender, about 5 minutes.
Step 4.
Reduce heat to medium-low; stir in 1 (5-ounce) package baby spinach and 1 cup cream; cook, stirring constantly, until the spinach is wilted, about 1 minute. Divide among 6 bowls; garnish with additional basil, if desired.
