Eggplant
Eggplants have a deep purple colour. The skin of the eggplant has significant medicinal value.
Two chemicals found in the eggplant skin are Nasunin and Delphinidin 3 glycoside. Both of these chemicals are potent antioxidants. Nasunin is primarily found in the eggplant skin and is responsible for the deep purple colour. Delphinidin-3-glucoside contributes to the purple colour and acts as a free radical scavenger.
