Peanut Butter Rice Cakes

Okayyyy....these are reminiscent of several popular chocolate PB candy bars & candies! The PB + Chocolate combo combined with the crunchy texture of the Salted Brown Rice Cakes is absolutely beyond perfect and satisfying. Such a super simple homemade treat that delivers big time on flavor and overall satisfaction when you're craving a treat!

This is a fun one to make with the kids! Let them mix things up and create their own variations!

➑️When shopping for ingredients:

Look for higher percentage of cacao for the chocolate chips, and always read the ingredients.

Lots of questions about chocolate brands - I like to visit the specialty (nicer) chocolate section at the stores and find a really high quality, (often organic) dark chocolate bar on SALE - so I'm always trying something different because I shop the sales.

A high-quality dark chocolate bar works great too! I'll often find a beautiful organic dark chocolate bar on sale, then chop it up to use for things like this.

I like to buy the highest quality I can find when it's on SALE! I'm always keeping an eye out for a good deal, and will often stock up when a high-quality product is on special.

Use any dark chocolate chips of your choice: the higher cacao percentage = more health benefits.

If you're looking to keep sugars lower; try using Lily's brand chocolate that is sweetened with stevia.

When shopping for peanut butter I try to make sure peanuts and salt are the only ingredients. Especially steer clear of peanut butter with added oils and lots of added sugar.

Ingredients:
4 sea salted organic brown rice cakes
4 Tbsps crunchy peanut butter
1/3 cup melted dark chocolate
a handful of peanuts, coarsely chopped - optional

Instructions:

Spread the top of each rice cake with one tablespoon of peanut butter and lay them on a sheet pan.

Freeze for about 15 minutes while you melt your chocolate chips.

Melt your chocolate in a double boiler or in the microwave, stirring every 20 seconds.

Next, spoon over some melted chocolate to top the peanut butter as shown.

Caprese Stuffed Chicken Breasts πŸ…πŸŒ±

Tis' the season, friends! That's right - garden fresh tomatoes are overflowing from the vines. There's absolutely nothing better than a vine-ripened summer tomato in my opinion! We're enjoying them every way we can at our house right now since our garden is producing about 12+ tomatoes each day currently.

This recipe is pretty simple with just a few ingredients, and it always comes out delicious! Did I mention, just one pan to clean?!

If you're anything like my family then you probably eat chicken a few times each week...so it's essential to have an abundance of FABULOUS FRESH recipes.

Make this a complete meal by serving with cauliflower rice, quinoa, roasted green beans, or broccoli.

For Meal-Prepping:

Divide your cooked chicken breasts equally into 4 separate air-tight containers. Add a 1/2 cup of cooked cauliflower rice or quinoa to each serving.

Cover with lids and store in the refrigerator for up to 4 days.

Ingredients:

4 chicken breasts boneless, skinless
2 tsps dried basil
1 tsp garlic powder
sea salt and ground pepper, to taste
4 large vine-ripened tomatoes
4 oz fresh mozzarella cheese, thinly sliced
1 Tbsp olive oil or avocado oil
fresh basil leaves

Instructions:
Preheat your oven to 375 degrees f.

Thinly slice two of the vine tomatoes; Dice the remaining two.

Rub each chicken breast with dried basil, garlic powder, sea salt, and pepper on all sides.

Slice each chicken breast down the middle lengthwise, but don't go all the way through. Just enough to create a large pocket for the fillings.

Stuff the pockets with tomato slices, mozzarella, and basil leaves.

Insert toothpicks to seal the pockets.

Heat your oil in an oven-safe skillet over medium heat. Add the chicken and sear until golden-brown on both sides, about 4 minutes on each side.

Add the diced tomatoes to the pan and transfer them to your preheated oven.

Bake for 12 minutes or until cooked through.

If you've ever eaten a ripe-juicy peach just picked from its tree, you know it's a real treat!

We love getting fresh peaches from any of the local farmers stands here in Utah during the late Summer months.

This is one of my favorite easy dessert ideas during those months when peaches are bursting off the branches.

Not only is this one of the simplest recipes, but these peaches smell heavenly while baking...I suggest you throw some in your oven ASAP while the gettin 's still good. 😜

makes 6 servings

Ingredients:
3 large ripe peaches β€” halved and pitted
1/4 cup raw honey, or pure maple syrup
1 vanilla bean; seeds of
1 tsp ground cinnamon
1/4 tsp ground cloves
1/4 tsp ground nutmeg
a pinch of sea salt

Optional topping ideas: Greek or coconut yogurt, Whipped coconut cream, chopped walnuts, chopped pecans, granola, fresh mint leaves etc.

Instructions:
Preheat your oven to 350 degrees f.

In a small bowl, whisk honey, freshly scraped vanilla seeds, cinnamon, clove, and sea salt.

Place your halved peaches cut side up into a baking dish that's just big enough to fit them all, as shown.

Spoon your syrup on top of the peaches, making sure they all get coated.

Bake peaches in your preheated oven, uncovered, for 25-30 minutes, or until golden and tender.

Add your favorite toppings and enjoy!

Fresh Watermelon Sorbet πŸ˜πŸ‰πŸ˜

Icy Summertime PERFECTION, in a sweet, frozen, healthy treat.

Skip the sno-cone shacks this Summer, and make your own healthier, ice cold treat!

Simple prep, and you don't even need an ice cream maker!

πŸ‰Made up of over 90 percent water, watermelon is one of the most hydrating foods available to us. Thank goodness it's peak watermelon season during these HOT Summer months! Mother Nature definitely knows what she's doing.

Besides being full of water, watermelons are also a surprisingly nutrient dense food. They provide high levels of vitamins, minerals, and antioxidants all within just a small number of calories.

Watermelons are actually relatively low in sugar compared to other fruits. A one-cup serving of diced watermelon has just nine grams of natural sugar. That’s less than what you’d get from my favorite fruit; apples (11 grams).

makes about 8 servings

Ingredients:
1 small seedless watermelon, peeled and cubed
1/3 cup raw honey, or pure maple syrup
1 fresh lime, juice & zest
fresh mint leaves and lime wedges, to garnish

Instructions:

Rinse your watermelon thoroughly and pat the excess moisture with a towel.

Using a large kitchen knife, carefully cut the melon in half.

Place one half cut side down on a cutting board and slice vertically down the middle to the end to create quarters.

Carefully slice off the rind, and slice the melon into cubes.

Prepare a large tray by lining it with parchment paper.

Place the cubed watermelon in a single layer on the prepared baking sheet.

Place into the freezer and freeze for at least 4 hours or overnight, until completely frozen.

Next place your frozen watermelon cubes, honey, lime juice and zest into a high speed blender or food processor and pulse until smooth, pauseing once or twice to scrape the sides.

Transfer this puree into a deep baking dish, cover with a plastic wrap and freeze until sorbet is scoopable about 1-2 hours.

Once it's completely set, scoop into serving bowls and garnish with fresh mint leaves and lime wedges.
