"Fungal extracts have been recognized for producing secondary metabolites with cytotoxic, antimicrobial, and antitumor properties, often exhibiting selectivity for tumor cells."

We believe the Trichoderma-based extract has secondary metabolites with relevant biological properties, including antimicrobial, antioxidant, and antitumor activity. These properties can directly benefit human health, both by reducing exposure to toxic chemicals that harm the environment and health and by developing new therapeutic compounds for the treatment of diseases such as cancer.

The increasing interest in plant-based, functional, and probiotic-rich foods has driven the development of alternative dairy-free fermented beverages. This study aimed to formulate a vegan fermented beverage using a water-soluble pistachio extract (WSVP) as a substrate for water kefir grains, evaluating the effects of selected functional ingredients on microbial growth, fermentation performance, and the production of bioactive compounds.
