Our spin on a quick and easy “cheesecake parfait”
Crust: in a food processor, grind whole wheat crackers, dates and pecans. Mix in almond butter to hold it together
Add a spoonful of cool whip
Top with fruits, more almond butter 🤤 and crumbled pecans

Instead of skipping breakfast, here is a great and quick breakfast idea.

Banana Blueberry smoothie:
- 1 ripe banana
- 10 blueberries
- 3 tbsp old fashioned oats
- 1/2 cup reduced fat Greek yogurt
- 1/2 cup skimmed milk
- 6 almonds

Blend and serve! 😉

And there you have a complete and balanced breakfast made under 5 minutes. 😁

Tonight's dinner: Ceviche! 😍

Ceviche can actually be considered a healthy meal:
1️⃣ Seafood is actually a lean protein 🐟
2️⃣ You can mix it up with different vegetables and even fruits adding tomato, onion, cucumber, carrots, mango (while we have ☹️), you can even add avocado (good fat 😉)

BUT if you suffer from high cholesterol, I do not recommend eating it that often given that seafood is high in cholesterol 👎🏽

It's best accompanied by baked corn tortilla or even soda biscuit. Give it a try! 😊

Greek Yogurt Cheesecakes

I believe dessert can and SHOULD be a part of a healthy diet, but it's all about portion control and using good quality ingredients.

These Greek yogurt cheesecakes are packed with protein, have NO added sugars and NO added fat:
🔸 The crust is full of good fats from nuts and full of fiber from bran flakes and dates (which add natural sweetness too 😉 no need for added sugar!)
🔸 The filling is low in fat and high in protein using low fat cream cheese and low fat Greek yogurt.
🔸 Instead of sugar, an artificial sweetener is used for that sweet taste without all the extra calories. 😁

🔸 Rich in natural antioxidants.
🔸 Good source of vitamins A and C, and minerals like iron and calcium.
🔸 The seeds contain polyunsaturated (good) fatty acids 👍🏼

I normally just cut it lengthwise and eat it with a spoon. 😅 But today I tried something different and made this delicious and refreshing juice. Just blend 1/2 pitaya cut in cubes, 1 tsp lime, stevia and ice. That's it! 😁

Baked Zucchini Fries

Just had these for dinner and they are so good!

You will need:
- 1 large zucchini
- 2 eggs (you can use 2 whole eggs or the egg whites only)
- Flour
- Bread Crumbs
- Cooking spray

Preparation:
1️⃣ Preheat oven to 425 degrees Celsius. Spray a baking sheet and set aside.
2️⃣ Cut zucchini into strips.
3️⃣ Dredge zucchini into flour, dip into eggs, then dredge in the bread crumbs.
4️⃣ Spread on the prepared baking sheet and bake for 20 - 24 minutes or until golden brown and crisp.
5️⃣ Serve immediately. 👍🏼
